Egg Drop Soup with Ginger, Chiles + Spring Peas

In a medium saucepan, bring chicken broth to a simmer
- 1 quart chicken broth or stock
- 1 small garlic clove, finely grated
- 1 teaspoon finely grated fresh ginger
- 1 tablespoon rice-wine vinegar
- 2 teaspoons teaspoons cornstarch
- 2 teaspoons soy sauce
- 1 cup frozen peas
- 2 large eggs
- 1 fresh chile, such as Serrano, thinly sliced
- 2 scallions, thinly sliced
- 4 small radishes, very thinly sliced

New England Clam Chowder

Bring bottled clam juice and potatoes to boil in heavy large saucepan over high heat
- 3 bottles clam juice - (8 oz ea)
- 1 pound russet potatoes peeled, and cut into 1/2" pieces
- 2 tablespoons butter - (1/4 stick)
- 3 slices bacon finely chopped
- 2 cups chopped onions
- 1 1/4 cups chopped celery with leaves (abt 2 large stalks)
- 2 garlic cloves chopped
- 1 bay leaf
- 1/4 cup all-purpose flour
- 6 cans chopped clams - (6 1/2 oz ea) drained, and juices reserved
- 1 1/4 cups half-and-half
- 1 teaspoon hot pepper sauce
- Salt to taste
- Freshly-ground black pepper to taste
