Velveeta Cheese Dip

A delicious warm meat and cheese dip that is just as tasty with crackers as it is with tortilla chips
- Large (2 lb.) Velveeta, diced in small cubes
- 1 lb. ground beef
- 1/4 lb. sausage (I use Jimmy Dean traditional flavor)
- 1/4 cup diced onion
- 1 small can diced green chilis
- 1 can Rotel tomatoes w/chilis
- 1 can cream of mushroom soup
- Garlic powder to taste
Meatballs

Preheat oven to 350 degrees
- Sauce:
- 3 lbs hamburger
- 3 cups quick oats
- 1/2 teaspoon garlic powder
- 1 cup diced onion
- 2 teaspoons salt
- 2 eggs
- 1 14 oz. can evaporated milk
- 2 cups catsup
- 1 cup brown sugar
- 1/2 teaspoon onion salt
- 2 tablespoons liquid smoke
- 1 cup water

- 2 cups shredded cabbage
- 2 small zucchini, sliced (2 cups)
- 1 12-ounce can whole kernel corn
- 2 ribs celery, sliced (1 cup)
- 1 medium onion, chopped (1/2 cup)
- 1/2 cup broken vermicelli (2 oz.)
- 1/2 cup dry red wine
- 2 tablespoons snipped parsley
- 1 1/4 teaspoons instant beef bouillon granules
- 1 teaspoon dried oregano, crushed
- 1/4 teaspoon dried basil, crushed
- 1/8 teaspoon garlic powder
- 1 beaten egg
- 1/4 cup milk
- 1/3 cup fine dry bread crumbs
- 1 teaspoon Worcestershire sauce
- 1 pound ground beef
- Grated Parmesan cheese
BBQ Beans

- 2 lb lean ground beef
- 1 lb ground pork
- 1 Lg onion diced small
- 3 jalapenos seeded and diced small
- 2 med cans diced tomatoes
- 1 med can red chile or enchilada sauce Medium flavor
- 1 T Granulated Garlic
- 1 T Ground Cumin
- 2 T dark Chili powder
- 2 cans green chiles
- 10 cans ranch style beans
- 1 small can tomato paste
- 2 TBS Better than Bullion beef concentrate
- 1 1/2 C water
- Secret Ingredient # 1 1t cinnamon
- Secret Ingredient #2 2z 85% dark chocolate

- 3/4 cup plus 2 tablespoons kosher salt
- 3/4 cup sugar
- 1 carrot, peeled, diced
- 1 large onion, peeled, diced
- 1/4 cup diced celery
- 2 large sprigs thyme
- 2 bay leaves
- 1 tablespoon black peppercorns
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon fennel seeds
Black-Bean and Brown-Rice Cakes

This recipe makes enough to serve four as a main course
- 2 cans (15 ounces each) black beans, rinsed and drained
- 2 large scallions, coarsely chopped
- 1 jalapeno, seeded and chopped
- 1/4 teaspoon ground cumin
- 3/4 cup cooked brown rice
- Coarse salt and ground pepper
- 1 tablespoon extra-virgin olive oil
- 1/2 cup plain low-fat yogurt
- 1 tablespoon finely chopped fresh cilantro, plus leaves for serving
- 1 tablespoon fresh lime juice

- 16 ounces elbow macaroni
- 1/2 cup butter, melted
- 2 eggs, beaten
- 1 can (12 oz)evaporated milk
- 1 can cheddar cheese soup
- 1 cup milk
- 4 cups shredded cheddar cheese, divided
- 1/8 teaspoon paprika
Bread Machine Bread

This bread recipe is for high altitude
- 2 1/2 cups bread flour
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 2 tablespoons milk
- 2 tablespoons shortening
- 3/4 cup lukewarm water
- 1/2 teaspoon dry yeast

Cook hamburger and onion together and drain
- 1 large container Velveeta
- 1 can cream of mushroom soup
- 1 pound hamburger
- 1/2 roll sausage
- 1 tablespoon garlic powder
- 1 can Rotel tomatoes with chili
