This is the recipe our family uses for our Thankgiving sweet potatoes

  • 6 medium-sized sweet potatoes (about 3 1/2 lb.)
  • 1 teaspoon salt
  • Water
  • 3/4 cup butter or margarine
  • 1 cup packed, light or dark brown sugar
  • 1 1/2 cups orange juice
  • 2 tablespoons coarsely grated orange peel
  • 1/4 teaspoon salt
  • 2 large tart cooking apples (i.e. Granny Smith), peeled, cored, and sliced 1/4 inch thick

  • 2 Tbsp extra virgin olive oil
  • 6 cloves garlic, minced
  • 1 medium onion, diced
  • 4 carrots, diced
  • 2 ribs celery, diced
  • 1/2 cup white wine
  • 1 (28-oz) can tomato pureé
  • 1 (28-oz) can crushed tomatoes
  • 3 (28-oz) cans diced tomatoes
  • 1 Tbsp dried oregano
  • 1 Tbsp dried basil
  • 1 Tbsp sugar
  • 4 tsp kosher salt
  • 1 tsp ground black pepper

This is a moist and tender roast

  • 1 (4 to 5-pound) sirloin tip roast, netted or tied at 1-inch intervals
  • 10 cloves garlic, peeled and halved lengthwise, plus 4 to 6 garlic cloves, peeled
  • 1 tablespoon Essence, plus 1 1/2 teaspoons
  • 1 1/4 teaspoons freshly ground black pepper
  • 1 1/4 teaspoons salt
  • 1 cup dry red wine
  • 3 tablespoons tomato paste
  • 4 large carrots, scrubbed
  • 2 stalks celery, trimmed and cut in half crosswise
  • 2 medium yellow onions, peeled and quartered
  • 1 pound small new potatoes
  • 2 tablespoons vegetable oil
  • 1 cup beef stock, or canned low-sodium beef broth
  • 2 bay leaves
