Glazed Sweet Potatoes and Apples

This is the recipe our family uses for our Thankgiving sweet potatoes
- 6 medium-sized sweet potatoes (about 3 1/2 lb.)
- 1 teaspoon salt
- Water
- 3/4 cup butter or margarine
- 1 cup packed, light or dark brown sugar
- 1 1/2 cups orange juice
- 2 tablespoons coarsely grated orange peel
- 1/4 teaspoon salt
- 2 large tart cooking apples (i.e. Granny Smith), peeled, cored, and sliced 1/4 inch thick
Marinara Sauce

A delicate tomato-based sauce that can be used as is, or with cooked ground beef and/or ground turkey or chicken
- 2 Tbsp extra virgin olive oil
- 6 cloves garlic, minced
- 1 medium onion, diced
- 4 carrots, diced
- 2 ribs celery, diced
- 1/2 cup white wine
- 1 (28-oz) can tomato pureé
- 1 (28-oz) can crushed tomatoes
- 3 (28-oz) cans diced tomatoes
- 1 Tbsp dried oregano
- 1 Tbsp dried basil
- 1 Tbsp sugar
- 4 tsp kosher salt
- 1 tsp ground black pepper
Garlic Studded Pot Roast

This is a moist and tender roast
- 1 (4 to 5-pound) sirloin tip roast, netted or tied at 1-inch intervals
- 10 cloves garlic, peeled and halved lengthwise, plus 4 to 6 garlic cloves, peeled
- 1 tablespoon Essence, plus 1 1/2 teaspoons
- 1 1/4 teaspoons freshly ground black pepper
- 1 1/4 teaspoons salt
- 1 cup dry red wine
- 3 tablespoons tomato paste
- 4 large carrots, scrubbed
- 2 stalks celery, trimmed and cut in half crosswise
- 2 medium yellow onions, peeled and quartered
- 1 pound small new potatoes
- 2 tablespoons vegetable oil
- 1 cup beef stock, or canned low-sodium beef broth
- 2 bay leaves
Cheese Ball

This recipe uses cream cheese instead of the usual cheddar cheese
- 2 8 oz. packages cream cheese
- 2 cups pecans, finely chopped
- 2 tablespoons onion, finely chopped
- 1 8 1/2 oz. can crushed pineapple, drained very very well
- 1/2 cup green pepper, chopped small
- 1 tablespoon Season All
Holiday Sugar Cookies

These resemble a shortbread cookie more than a sugar cookie
- 1 cup butter, softened
- 3/4 cup powdered sugar
- 1 1/2 teaspoons vanilla
- 1/2 cup half & half or canned milk
- 2 cups flour
- 1/2 cup chopped pecans
- Candy sprinkles
Chocolate Cupcakes (high altitude)

These are quick to prepare and they are very light and moist
- 2 cups cake flour
- 2 cups sugar
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 1/2 teaspoons baking soda
- 1 cup unsalted butter, at room temperature
- 1 cup buttermilk
- 2 eggs
- 1 cup freshly brewed coffee, cooled to room temperature
Emeril's Essence

Combine all ingredients thoroughly
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
Whole Berry Cranberry Sauce

Bring water and sugar to a boil in a medium saucepan
- 1 cup water
- 1 cup sugar
- 12 oz. fresh or frozen cranberries

- 1/2 teaspoon salt
- 1 1/2 cups sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 1 tablespoon poppy seeds, plus more for sprinkling
Creamy Nog Punch

- 1 gallon vanilla ice cream
- 1/2 gallon eggnog
- 1 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 16 oz. container frozen whipped topping, thawed
