Garlic Bread

This is the authentic garlic bread recipe to accompany Santa Maria style barbeque tri-tip
- 3/4 stick butter
- 3/4 t salt
- 1/8 t black pepper
- 1/8 t ground cayenne pepper
- 1/2 t paprika
- 1 1/2 t parsley
- 1 t garlic (granulated or powder)
Chicken and Mushroom Roulades

Lobster, crab meat, broccoli, spinach, or diced ham also make excellent fillings
- 1 1/2 cups sliced onions
- 1/3 cup dry white French vermouth
- 1/3 cup chicken broth
- 1 cup fresh mushrooms, washed, dried, and sliced
- 2 skinless and boneless raw chicken breast halves, diced
- Salt and freshly ground pepper
- 1 1/3 cups of All-Purpose Cheese Sauce
- 8 crepes, 5 1/2 inches across
- A little milk, as needed
- 3 tablespoons grated swiss cheese
Parker's Beef Stew

Place the beef in a bowl with red wine, garlic, and bay leaves
- 2 1/2 pounds good quality chuck beef, cut into 1 1/2-inch cubes
- 1 bottle good red wine
- 3 whole garlic cloves, smashed
- 3 bay leaves
- 2 cups all-purpose flour
- Kosher salt
- Freshly ground black pepper
- Good olive oil
- 2 yellow onions, cut into 1-inch cubes
- 1 pound carrots, peeled and cut diagonally in 1 1/2-inch chunks
- 1/2 pound white mushrooms, stems discarded and cut in 1/2
- 1 pound small potatoes, halved or quartered
- 1 tablespoon minced garlic (3 cloves)
- 2 cups or 1 (14 1/2-ounce can) chicken stock or broth
- 1 large (or 2 small) branch fresh rosemary
- /2 cup chopped sun-dried tomatoes
- 2 tablespoons Worcestershire sauce
- 1 (10-ounce) package frozen peas
Texas Brownies

This is an easy, quick recipe that uses basic pantry ingredients
- Frosting:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1/2 cup (1 stick) butter or margarine
- 1/2 cup shortening
- 1 cup strong brewed coffee or water
- 1/4 cup dark, unsweetened cocoa
- 1/2 cup buttermilk*
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/2 cup (1 stick) butter or margarine
- 2 tablespoons dark cocoa
- 1/4 cup milk
- 3 1/2 cups unsifted powdered sugar
- 1 teaspoon vanilla
- *If you don't have buttermilk on hand, substitute 2 teaspoons vinegar or lemon juice. Mix into 1/2 cup milk.
The Ultimate Fish Tacos

In my opinion, these are the perfect fish tacos
- 1/4 cup olive oil
- 1 tsp. ground cardamom
- 1 tsp. paprika
- 1 tsp. salt
- 1 tsp. pepper
- 6 mahi mahi fillets (6 oz. each)
- 12 corn tortillas (6 in.) (I use street taco size tortillas)
- 2 cups chopped red cabbage
- 1 cup chopped fresh cilantro
- Salsa Verde, optional
- 2 medium limes, cut into wedges
- Hot Pepper Sauce
Pepper Steak, Oriental

Partially freeze beef; cut across grain into 1/4-inch strips
- 1 1/2 pounds boneless beef round tip
- 3 tablespoons soy sauce
- 1 tablespoon cooking oil
- Dash freshly ground pepper
- 1/2 teaspoon grated gingerroot or ground gigner
- 1 clove garlic, minced
- 1 tablespoon cooking oil
- 1 medium green pepper, sliced
- 2 cups sliced fresh mushrooms (about 5 ounces)
- 6 green onions with tops cut in 1/2-inch pieces
- 1/2 cup beef broth
- 1 tablespoon cornstarch
- 2 medium tomatoes, cut in wedges
- Hot cooked rice

- 1 can cherry pie filling
- 1 can crushed pineapple, drained
- 1 8 ounce Cool Whip
- 1 14 ounce Eagle Brand Seetened Condensed Milk
- 1 teaspoon lemon juice
Tomato Tortellini Soup

Cook tortellini according to package directions
- 1 pkg. (9 oz.) refrigerated cheese tortellini
- 2 cans (10-3/4 oz. each) reduced-sodium condensed tomato soup, undiluted
- 2 cups vegetable broth
- 2 cups 2% milk
- 2 cups half-and-half cream
- 1/2 cup chopped oil-packed sun-dried tomatoes
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tsp. dried basil
- 1/2 tsp. salt
- 1/2 cup shredded Pamesan cheese
- Additional shredded Parmesan cheese, optional
Lettuce Cups with Stir-Fried Chicken

This is a very light appetizer, but the recipe is plenty for my husband and me to split as a main course
- 16 large butter lettuce leaves
- 1/2 cup Asian sweet chili sauce
- 1 lb. skinless, boneless chicken thighs, minced
- 2 scallions, minced
- 2 tablespoons soy sauce
- 1 teaspoon cornstarch
- 2 tablespoons peanut oil
- 3 medium shiitake mushrooms (about 1 oz.) stemmed, minced
- 2 garlic cloves, minced
- 1 teaspoon minced peeled fresh ginger
- 1/4 cup unsalted, roasted cashews, chopped
Pineapple Glazed Chicken with Jalapeno Salsa

The salsa dresses up chicken and would also be good on pork or fish
- 1/4 cup pineapple juice
- 2 tablespoons (packed) brown sugar
- 1 tablespoon yellow mustard
- 3/4 cup 1/4-inch cubes fresh pineapple
- 3 tablespoons finely diced red bell pepper
- 3 tablespoons chopped fresh cilantro
- 1 1/2 tablespoons finely chopped red onion
- 1 1/2 tablespoons canned sliced jalapeno chiles, drained, coarsely chopped
- 4 boneless chicken breast halves with skin (1 3/4 pounds total)
