Slow Cooker Chicken Thighs, Potatoes and Carrots

Place onion that was halved lengthwise, then cut into 1/4 inch slices in slow cooker
- 1 Medium Onion
- 4 New (red) Potatoes
- 2 c. Carrots, sliced
- 1/4 c. Chicken Broth
- 1/4 c. Dry White Wine
- 1 tsp. Garlic, minced
- 1/2 tsp. Dried Thyme
- 1 1/4 tsp. Salt, divided
- 1/2 tsp. Pepper, divided
- 1 tsp. Paprika
- 2 lbs. Chicken Thighs or Legs, bone-in (skinned, if desired)
Grilled Shrimp Scampi Pizza (6 ww pts)

In a skillet, heat the butter and olive oil
- Serves 1
- 1 6-8 inch whole wheat pita
- 4 to 5 large jumbo shrimp, peeled and deveined
- 2 to 3 teaspoons of garlic, chopped
- 1 tsp of light butter butter
- 1 tsp of extra virgin olive oil
- 1/8 cup of chicken stock
- 1/4 cup of mozzarella cheese

Instructions Preheat oven to 350
- 1 lb corned beef lunch meat (I used Healthy Choice Deli Counter)
- 6 sliced rye bread, crumbled
- 6 slices reduced fat swiss cheese

Serves 6 - 8 Preheat oven to 375F Melt 1 tablespoon of butter in a large skillet set over medium heat
- 1-2 tbsp butter

Jalapeño Popper Stuffed Chicken Breasts!

- 4 Chicken Breasts
- 4 Tablespoons Cream Cheese
- 2 tablespoons cheddar cheese (optional)
- 2 Whole Jalapeños

Penne With Scallops

Place scallops in bowl with lemon rind
- Yields 4 servings
- 2 cans Roma Tomatoes -- Chopped
- 1 pound Scallops
- 1 tablespoon Garlic -- chopped fine
- 1 teaspoon Salt
- 1 pound Penne -- dried
- 2 tablespoons Italian Parsley
- 1/3 cup Olive Oil
- 1/4 teaspoon Chili Pepper
