Emeril's Smashed Potatoes with Sour Cream and Chives

Absolutely the best smashed potatoes!!
- 4 pounds new potatoes (uniform size and no larger than approximately 2 inches in diameter)
- 1/4 cup plus 1 tablespoon olive oil
- 1 tablespoon plus 1 teaspoon Kosher salt
- 1/2 teaspoon black pepper (freshly ground)
- 1/4 cup chives, chopped
- 6 tablespoons butter, diced
- 1 tablespoon garlic, minced
- 1 cup sour cream

1. Place water in a medium bowl; sprinkle with yeast
- 1 cup warm water (about 110 degrees)
- 1 teaspoon active dry yeast (from one 1/4-ounce envelope)
- 3 cups all-purpose flour, plus more for surface and hands
- 3 tablespoons extra-virgin olive oil, plus more for bowl
- Coarse salt
- 1 teaspoon sugar
- 1 large egg whisked with 1 tablespoon water, for egg wash
- Sea salt, for sprinkling
- 1/4 cup fresh rosemary or thyme (or a combination)
Lemon-Pistachio Cheese Ball

Mix cream cheese with goat cheese, currants and lemon zest
- 8 ounces cream cheese, softened
- 8 ounces goat cheese
- 3 tablespoons dried currants
- Pinch lemon zest
- 1 cup pistachios, toasted and chopped
- Vanilla wafers, for serving
Mediterranean Meatloaf (Prosciutto wrapped)

Preheat oven to 400. Grease a large 9X13" low sided baking dish with EVOO
- 1 lb ground pork
- 1 lb ground beef
- 4-6 oz prosciutto sliced medium
- 1 large eggs
- 1/2-1 cup grated parmesan
- 1/4-1/2 cup breadcrumbs
- 2 tsp chopped garlic ginger paste (ok if you don't have the ginger)
- 1/4 cup chopped onion
- 1 tsp cilantro
- 1 tsp chopped mint
- 1 tsp coriander
- 1 tsp cumin
- 2/3 Tbsp chopped pistachios, almonds or cashews
- 3/4 tsp salt
- 1/4 tsp ground cloves
- 1/4 tsp ground cinnamon
- 1/4 tsp Hungarian paprika
- 1/4 tsp ground cardamom
- 3/4 cup dry white or rose wine (I've used merlot)
