- 1 cup sugar
- 1/2 cup light corn syrup
- 1 tablespoon butter
- 1 teaspoon baking soda
- 1/2 cup chopped pistachios
- 1/3 cup chopped dried apricots

30 Minute Shepherd's Pie

- 2 pounds potatoes, such as russet, peeled and cubed
- 2 tablespoons sour cream or softened cream cheese
- 1 large egg yolk
- 1/2 cup cream
- Salt and freshly ground black pepper
- 1 tablespoon extra-virgin olive oil1 3/4 pounds ground beef
- 2 carrots, peeled and chopped
- 1 onion, chopped
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup beef stock or broth
- 1 tablespoon tomato paste
- 2 teaspoons Worcestershire, eyeball it
- 1/2 cup frozen peas
- 1/2 cup frozen corn
- 1 teaspoon sweet paprika
- 2 teaspoons fresh rosemary chopped
- 1 teaspoon fresh thyme chopped
- 2 tablespoons chopped fresh parsley leaves
Cherry-Filled White Cocolate Blondies

1. Melt butter in a saucepan over low heat, stirring just until melted
- 1/2 cup butter, softened
- 1 (12 oz.) package white chocolate morsels, divided
- 2 large eggs
- 1/2 cup sugar
- 1/2 tsp almond extract
- 1 cup all-purpose flour
- 1/2 tsp salt
- 1/2 cup cherry preserves
- 1/2 cup sweetened flaked coconut
- 1/2 cup sliced almonds
Rosemary Olive Roast Beef

Preheat oven to 350 degrees F
- 1 3 1/2 pound beef sirloin tip roast
- 2 tablespoons chopped fresh rosemary
- 1 tablespoon kosher salt
- 2 teaspoons freshly ground black pepper
- 2 tablespoons olive oil
- Rosemary Olives
- Chopped fresh rosemary (optional)
- 1 1/2 cups pitted mixed olives
- 5 small cloves garlic, peeled, halved lengthwise, green sprouts removed
- 3 small sprigs fresh rosemary or 1 larger sprig cut into 2 to 3 pieces
- 3 sprigs fresh thyme
- 3 tablespoons extra-virgin olive oil
- Pinch kosher salt or flaked sea salt
- Few coarse grinds black pepper
- Small pinch Aleppo or crushed red pepper (optional)

- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon ground allspice
- 3/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 (18-oz.) jar seedless blackberry jam
- 1 cup finely chopped toasted pecans
- Powdered sugar (optional)
Easy Chicken Chalupa Casserole

This is very much like enchiladas
- 2-3 cooked chicken breast (boiled or grilled), chopped into small pieces or shredded
- 1 8-10oz jar red salsa
- 1 8-10oz jar green salsa
- 1 8 oz. bag shredded cheddar, colby or jack cheese
- 10 flour tortillas
- 1/4 - 1/2 cup chopped cilantro
Red Potato Bites

Preheat the oven to 375 degrees F (190 degrees C)
- 1 1/2 pounds small round red potatoes
- 4 slices bacon
- 1 cup sour cream
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh chives
- 1/2 cup shredded Cheddar cheese

Best-Ever Scones

Preheat oven to 450°. Stir together first 4 ingredients in a large bowl
- Savory Variations:
- 2 2 2 cups all-purpose flour
- 1/3 1/3 1/3 cup sugar
- 1 1 1 tablespoon baking powder
- 1/2 1/2 1/2 teaspoon salt
- 1/2 1/2 1/2-inch cup cold butter, cut into 1/2-inch cubes
- 1 1 1 cup whipping cream, divided
- Wax paper
- Sweet Variations
- 1/4 2 Stir in 1/4 cup dried cherries, coarsely chopped, and 2 oz.coarsely chopped semisweet chocolate with the cream.
- 1/2 2 Stir in 1/2 cup finely chopped dried apricots and 2 Tbsp. finely chopped crystallized ginger with the cream. Drizzle with Vanilla Glaze after baking.
- 1/4 1/4 Stir in 1/4 cup sweetened dried cranberries and 1/4 cup coarsely chopped roasted salted pistachios with the cream.
- 1/2 Sugar-Pecan Scones: Substitute brown sugar for granulated sugar. Stir in 1/2 cup chopped toasted pecans with the cream.
- 3/4 1/4 2 1/2 Scones: Omit sugar. Stir in 3/4 cup (3-oz.) shredded sharp Cheddar cheese, 1/4 cup finely chopped cooked bacon, 2 Tbsp. chopped fresh chives, and 1/2 tsp. freshly ground pepper with the cream.
- 3/4 1/2 1 Asiago Scones: Omit sugar. Stir in 3/4 cup finely chopped fresh pear, 1/2 cup grated Asiago cheese, and 1 tsp. chopped fresh rosemary with the cream.
- Festive Touch
- 2 8 12 to 13 2 (4-inch) rounds. Cut rounds into 8 wedges. Bake as directed for 12 to 13 minutes.
- 1 1 1/2 to 2 powdered sugar, 1 tbsp milk, and 1/2 tsp vanilla extract until smooth, adding up to 2 tsp add'l milk for desired consistency, drizzle over tops.
Pork with Butternut Squash Barley Risotto

1. Heat a 10-inch skillet over medium heat
- 1/2 cup regular barley
- 1 32 ounce container vegetable stock or broth
- 1/2 small butternut squash, peeled, seeded, and cut into cubes (2 cups)
- 1/4 cup snipped fresh basil
- 1 tablespoon snipped fresh oregano and/or thyme
- 2 cloves garlic, peeled
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 teaspoons olive oil
- 12 ounces pork tenderloin
- Snipped fresh basil, oregano, and/or thyme

- 1/2 pound white mushrooms, thinly sliced
- 1 large shallot, minced
- 3/4 cup dry white wine
- 1 1/4 cups chicken stock or low-sodium broth
- 1/2 cup heavy cream
- 2 tablespoons grainy mustard
- 2 tablespoons chopped tarragon
- Buttered noodles, for serving
