Wonton Fruit Cups

An elegant way to enjoy fruit
- 24 wonton wrappers
- 2 tablespoons butter or margarine, melted
- 1/3 cup strawberry all-fruit spread
- 1 cup (8 ounces) low-fat lemon yogurt
- 1 1/4 cups fresh blueberries, blackberries, or raspberries
Pumpkin Seeds

15 different ways to make pumpkin seeds
- 1. Italian: Italian seasoning blend, parmesan cheese, olive oil, salt and pepper. Perfetto!
- 2. Ragin' Cajun: Cajun seasoning, salt, pepper (add a sprinkle of Tobasco if you like it extra hot -- you know you do).
- 3. Au Naturale: Sea salt, butter -- can't go wrong with the original.
- 4. Greek: Lemon pepper seasoning blend, oregano, salt, and olive oil for those big fat Greek families.
- 5. Get Curried Away: For every cup, mix 2 tsp. curry powder, and 1/2 tsp. of salt.
- 6. Honey Mustard: Toss each cup of roasted pumpkin seeds in a mixture of 1 tsp. brown spicy mustard and 2 tsp. honey.
- 7. Fall Delight: Cinnamon, brown sugar, white sugar, dash of salt.
- 8. Pumpkin Pie: Pumpkin pie pumpkin seeds (try to wrap your head around that one) consists of cinnamon, ground ginger and pinch of nutmeg.

mix yeast, a glass of warm milk, a tsp
- 1 kg all purpose flour, 300g butter, 200g sugar, 5 eggs, 250g milk, 1 1/2 cubes of fresh yeast (they're 25g each, so total is about 1 1/3 oz), a pinch of salt, a few drops of vanilla extract OR the grated zest of a lemon (organic!)
- (sugar+cinnamon powder to sprinkle on the cooked zeppole)

- 1 box (8 oz) uncooked manicotti shells (14 shells)
- 1 1/2 cups shredded Italian cheese blend (6 oz)
- 1/4 teaspoon crushed red pepper flakes
- 1 container (15 oz) reduced-fat ricotta cheese
- 1 box (10 oz) Cascadian Farm® frozen organic cut spinach, thawed, drained, squeezed dry
