Juanita's Potato Salad

This is by far the best potato salad that was ever made
- 6 Idaho Potatoes, peeled, cooked, cut into cubes
- 2 celery stalks, diced
- 1/2 yellow or sweet onion, minced
- 2 hard boiled eggs
- 1 small jar sweet pickles, chopped
- 1 cup mayonnaise
- 1/4 cup Marzetti's slaw dressing
- 1 tablespoon mustard
- salt and pepper to taste

This elegant appetizer can be shaped into almost anything
- Basil Pesto:
- 2 cups fresh basil leaves
- 1 cup freshly grated paremesan cheese
- 1/4 cup pine nuts
- 3 cloves garlic, peeled
- 1/2 cup olive oil
- Sun-Dried Tomato Pesto:
- 1 1/2 cups oil packed sun-dried tomatoes
- 6 medium sized cloves of garlic, peeled
- 1 cup packed fresh basil leaves
- 1 cup freshly grated parmesan cheese
- 1/2 cup olive oil
- 2 tablespoons balsamic vinegar

- 1- 8 oz package cream cheese, softened
- 4 sticks (1 pound) unsalted butter, softened
- 1 tablespoon Worcestershire sauce

- Directions:
- 1 3/4 cups all-purpose flour
- 3/4 tsp. baking soda
- 1 tsp. baking powder
- 1 1/2 Tbs. granulated sugar
- 1/2 tsp. salt
- 3 eggs, separated
- 1 3/4 cups buttermilk
- 4 Tbs. (1/2 stick) unsalted butter, melted
- 1 pint fresh blueberries
- Confectioners' sugar for dusting
- Maple syrup for serving

Old Fashioned Beef Stew

This is simply the best beef stew recipe I have made
- 2 pounds boneless stewing beef, such as chuck, short-rib meat, or bottom round cut into 2 inch cubes
- 1/2 to 1 teaspoon dried herbs (thyme, marjoram, savory, oregano and/or basil)
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 cup all-purpose flour
- 2 tablespoons olive or vegetable oil
- 1/2 cup finely chopped onions
- 1/4 cup finely chopped carrots
- 1/4 cup finely celery
- 1/4 cup finely chopped leeks (optional)
- 2 tablespoons chopped garlic
- 1/2 to 1 teaspoon herbs
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2-3 cups beef stock, dry red, white wine or beer
- 2-3 carrots, peeled and cut into 1 inch cubes
- 3-4 potatoes, peeled and cut into 1 inch cubes
- 1 to 1 1/2 tablespoons of kneaded butter (equal portions flour and butter)
