- 1/4 cup chicken stock or water
- 2 tablespoons oyster sauce
- 1 tablespoon soy sauce
- 1/2 teaspoon dark soy sauce or molasses (optional)
- 1/2 teaspoon sugar
- 2 tablespoons water
- 2 teaspoons cornstarch
- 2 tablespoons vegetable oil
- 2 teaspoons chopped garlic
- 2 teaspoons chopped fresh ginger
- 1/2 pound thinly sliced beef
- 3 cups broccoli florets
Scallops with Mustard Sauce

- Potato Encrusted Sea Scallops:
- 4 large sea scallops
- 1 Idaho potato
- Caramelized Shallots:
- 6 shallots
- Purple Mustard Sauce:
- 1 cup purple mustard (red wine and dijon mustard)
- 1/4 cup olive oil
- 1 tablespoon chopped garlic
- 1 tablespoon chopped shallots
- 1 tablespoon sour cream
Meyer Lemon Pan Grilled Scallops

Season the scallops with salt, pepper and Cajun seasoning on both sides
- 8 large scallops
- 2 tbl coconut oil
- 2 tbl butter
- 1/2 tsp sea salt
- 1/2 tsp pepper
- 1/2 tsp Cajun Seasoning
- 1 Meyer Lemon juice/zest (regular lemon substitute)

The Best Chocolate Chip Cookies

1. Melt butter in a medium saucepan over medium-high heat
- 8 ounces (2 sticks) unsalted butter
- 1 standard ice cube (about 2 tablespoons frozen water)
- 10 ounces (about 2 cups) all-purpose flour
- 3/4 teaspoon baking soda
- 2 teaspoons Diamond Crystal kosher salt or 1 teaspoon table salt
- 5 ounces (about 3/4 cup) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 5 ounces (about 1/2 tightly packed cup plus 2 tablespoons) dark brown sugar
- 8 ounces semi-sweet chocolate, roughly chopped with a knife into 1/2- to 1/4-inch chunks
- Coarse sea salt for ganish

- 4 tablespoons butter
- 1/4 cup finely chopped onion
- 5 tablespoons flour
- 3 cups chicken broth
- 1 cup carrots cut into 1/2 inch dice
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon chopped fresh sage or 1/2 teaspoon dried sage
- 1 cup milk
- 1 cup fresh, or frozen, defrosted corn kernels
- 1 cup fresh, or frozen, defrosted petite peas
- 2 cups cooked chicken
- 1 puff pastry sheet, thawed
