Winter Fruit and Nut Salad

This is a delicious salad, excellent on a cold night with beef burgundy or beef stew
- Maple Roasted Walnuts:
- 1- 10 oz. bag of fresh baby spinach
- 1 large fresh pear, cored and sliced
- 1/2 cup golden raisins
- 1/2 cup dried cranberries
- 1/2 cup Maple Roasted Walnuts
- 1/2 cup Maple Vinaigrette Dressing
- 2 tablespoons butter
- 1/4 cup maple syrup
- 1/2 teaspoon cinnamon
- pinch of salt
- 8 oz. (2 cups) walnut halves
- Maple Vinaigrette Dressing:
- 2 tablespoons tarragon vinegar, or red wine vinegar
- 1 clove garlic, minced
- 1 small shallot, diced
- 2 tablespoons dijon mustard
- 1/2 cup pure maple syrup
- salt and pepper to taste
- 1/3 cup vegetable or canola oil
Bacon Wrapped Dates with Parmesan

These are absolutely delicious and I don't even like dates! Everyone loves them, even teenage boys! I make these
- 12 strips of bacon
- 24 pitted dates
- 1/4 pound Parmigiano-Reggiano Cheese, cut into small chunks
Sweet Corn Salad with Black Beans, Scallions and Tomatoes

When summer corn is at it's sweet peak, make this hearty salad for a picnic or supper on the porch
- 8 ears corn on the cob
- 4 tablespoons extra virgin olive oil
- 2 cups black beans, drained and rinsed
- 4 scallions, chopped
- 3 ripe plum tomatoes, seeded and chopped
- 1 red bell pepper, diced
- 3 tablespoons red wine vinegar
- coarse sea salt
- freshly ground pepper
- 2 tablespoons chopped cilantro
Lobster Tails with Roasted Garlic

- 2 lobster tails
- 5 cloves Roasted Garlic
- 1/4 cup light olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
Turtle Cake

- 1 box (18-19 ounces) German chocolate cake mix
- 1 bag (14 ounces) caramels, unwrapped
- 1 small can (5 ounces) evaporated milk
- 2 tablespoons butter
- 1 bag (12 ounces) semi-sweet chocolate chips
- 1 cup chopped pecans

- Cream Cheese Frosting:
- 1/2 1/2 1/2 lb Golden Raisins
- 3/4 3/4 3/4 lb Pineapple Tidbits, canned, drained
- 1/2 1/2 1/2 cup walnut pieces
- 1 1/2 1 1/2 1/2 lbs carrots, washed
- 1 1 1 pond canola oil
- 1 1/2 1 1/2 1/2 lbs sugar
- 3/4 3/4 3/4 lb whole eggs (7 eggs)
- 4 4 4 t salt
- 4 4 4 t ground cinnamon
- 2 2 2 t baking soda
- 3 3 3 t baking powder
- 1 1 1 lb flour
- 3/4 3/4 3/4 t ground allspice
- 3/4 3/4 3/4 t ground cloves
- 6 6 6 cups Cream Cheese Frosting (recipe below)
- 1 1/4 1 1/4 1/4 lbs Powdered Sugar
- 10 10 10 ounces Cream Cheese, room temperature
- 5 5 5 ounces unsalted Butter, room temperature
- 1 1 1 t vanilla extract
- Pinch Pinch Kosher Salt
Cheese Fondue

Cheeses have different fat and moisture contents and therefore react differently to heat
- 1 garlic clove, halved
- 2/3 cup dry white wine
- 1 tsp. fresh lemon juice
- 10 oz. Emmentaler cheese, grated
- 10 oz. Gruyère cheese, grated
- 1 Tbs. cornstarch
- 3 Tbs. kirsch
- Pinch of freshly ground white pepper
- Pinch of freshly grated nutmeg
- Pinch of paprika
- 1-lb. loaf French bread, cubed
