Branch Hill Chicken Salad

This is the chicken salad that Alex makes at Branch Hill Coffee Company, where she, and Jordan and Zach, work
- 1/2 pound chicken, cooked and diced
- celery, diced
- onion, chopped
- 1 tablespoon poppyseed
- mayonnaise
- red grapes, halved, (optional)
Couscous with Asparagus, Peas, and Sugar Snaps

Delicious side dish with flavorful, crisp vegetables
- 4 tablespoons extra-virgin olive oil, divided
- 2 tablespoons fresh lemon juice
- 2 large garlic cloves, minced, divided
- 1/2 teaspoon finely grated lemon peel
- 1 1/3 cups Israeli couscous (6 to 7 ounces)
- 1 3/4 cups (or more) vegetable broth
- 14 ounces slender asparagus spears, trimmed, cut diagonally into 3/4-inch pieces (about 2 1/2 cups)
- 8 ounces sugar snap peas, trimmed, cut diagonally into 1/2-inch pieces (about 2 1/2 cups)
- 1 cup shelled fresh green peas or frozen, thawed
- 1/3 cup chopped fresh chives
- 1/2 cup finely grated Parmesan cheese
Caramel Dipped Chocolate Covered Pretzels

These are a great dessert idea for a buffet table or party
- 1 teaspoon vegetable oil
- 20 Kraft caramels
- 2 1/2 teaspoons water
- 36 pretzel nuggets
- 4 ounces semisweet chocolate, finely chopped, divided
Spaghetti with Checca Sauce

This is a wonderful, easy, delicious pasta recipe
- 8 oz. angel hair pasta
- 4 green onions, chopped
- 3 cloves garlic, minced
- 12 oz. cherry tomatoes, halved
- 1 oz. freshly grated parmesan cheese
- 10 fresh basil leaves
- 3 tablespoons extra virgin olive oil
- 4 oz. fresh mozzarella cheese, cut into 1/2 inch cubes
- Reserved pasta cooking liquid
Sweet and Sour Dipping Sauce

This tastes wonderful with grilled or fried foods
- 1/3 cup pineapple juice
- 1/3 cup white vinegar or apple cider vinegar
- 1/3 cup sugar
- 1 tablespoon ketchup
- 1 teaspoon salt
- 2 tablespoons water
- 2 teaspoons cornstarch
Cucumber Salad

Simple, quick and delicious!
- 1-2 large cucumbers (or 4-5 lemon cucumbers), peeled, quartered lengthwise, then sliced crosswise
- 1-2 Tbsp chopped fresh dill, basil, or Thai basil*
- 2-3 Tbsp seasoned rice vinegar
- Salt and pepper to taste
- To chop the basil, chiffonade it by stacking the leaves on top of each other, rolling them up like a cigar, and taking thin slices from one end to the other.
Nancy's Delicious Oatmeal Raisin Cookies

This recipe is from my very good friend, and boy are they delicious! Seriously, couldn't stop eating them! You wo
- 2 c flour
- 2 c oatmeal (up to 1 c more)
- 2 c Rice Krispies (up to 1 c more)
- 1 t baking soda
- 1/2 t baking powder
- 1/2 t salt
- 1 c butter, softened
- 1 c white sugar (slightly less ok)
- 1 c firmly packed brown sugar
- 2 egg, slightly beaten
- 1 t vanilla extract
- Raisins or choc chips as desired
Tri-Colored Pasta Salad

This is very good. Great side dish to bring to a picnic or family gathering
- Dressing:
- 16 oz. tri-colored pasta, cooked and drained
- 1 cucumber, diced
- 1 tomato, diced
- 1/2 onion, diced
- 1 1/4 cup sugar
- 1 cup vegetable oil
- 1 cup white vinegar
- 2 teaspoons garlic salt
- 1 1/2 teaspoons pepper
- 1 teaspoon parsley
Sour Cherry Cobbler

- 1 to 1 1/4 cups sugar
- 1/4 cup cornstarch
- 4 cups pitted sour cherries (Michigan Cherries)
- 3/4 teaspoon vanilla
- 1/2 teaspoon almond extract
- 2 tablespoons butter
- 2 cups flour
- 1 cup butter
- 1 cup granulated sugar
Leek and Potato Soup

An excellent lunch or light supper soup
- 3-4 cups of 1 pound, peeled potatoes, sliced or diced
- 3 cups or 1 pound thinly sliced leeks, including the tender green
- 2 quarts water
- 1 tablespoon salt
- 4-6 tablespoons whipping cream
- 2-3 tablespoons minced parsley or chives
