Barbecued Beef Sandwiches

Delicious BBQ sandwiches to make in the slow cooker
- 2 T sweet paprika
- 1 1/2 t salt
- Pinch of cayenne pepper
- 2- 1 1/2 to 2-lb tri-tip roasts
- 2 T canola or vegetable oil
- 1 med. onion, finely chopped
- 2 cloves garlic, minced
- splash of red wine
- 2 cups tomato sauce
- 1 cups ketchup
- 2 T Worcestershire sauce
- 1/4 cup molasses
- 2 T sugar
- 2 T Dijon mustard
- 8 Kaiser, or soft onion rolls
Vegetable Risotto

Delicious risotto with tender vegetables makes this dish a special one to serve to your family
- 1 tablespoon olive oil
- 1/2 cup shallot, chopped
- 1 cup arborio rice, dry
- 1/3 cup Chardonnay, or other white wine
- 4 cups vegetable broth
- 6 ounces Mozzarella cheese, smoked, grated, about 1 1/4 cup tightly packed
- 4 ounces asparagus spears, fresh, cut into 1/4" pieces
- 4 ounces peas, frozen
- 4 large roasted red peppers, coarsely chopped
- salt and freshly ground pepper
- parsley, fresh, for garnish

- 1 c. finely chopped onion
- 2 t. minced garlic
- 1 generous cup finely chopped celery
- 1/2 c. finely chopped red bell pepper
- 1 t. cumin
- Pinch or 2 of thyme
- 2 - 15 oz. cans black beans, undrained
- 1 can vegetable or chicken broth
- 1 T. cornstarch mixed with 1 T. water
- Lemon juice to taste
- Cayenne pepper to taste
- Garnish: sour cream, cilantro

- For the Bread Pudding:
- 5 cups French Bread- cut into 1 inch cubes
- 1 qt whole milk
- 3 large eggs
- 2 cups sugar
- 2 tablespoons vanilla
- 1 teaspoon ground cinnamon
- 1 cup raisins (optional)
- 3 tablespoons butter, melted
- For the Whiskey Sauce:
- 1 cup sugar
- 1 stick butter, softened
- 1 large egg, beaten
- 1/4 cup bourbon, rum, or cognac
Summer Lemon-Vegetable Risotto

A wonderfully flavorful Risotto, made with summer fresh vegetables! Light and delicious! One of our favorites
- 8 ounces asparagus, trimmed and cut into 1-inch pieces
- 8 ounces sugar snap peas, trimmed and cut in half
- 5 teaspoons extra-virgin olive oil, divided
- 1 zucchini, halved lengthwise, and cut into 1/2 inch thick slices
- 1 yellow squash, halved lengthwise, and cut into 1/2 inch thick slices
- 4 3/4 cups organic vegetable broth
- 1/2 cup finely chopped shallots
- 1 cup uncooked Arborio rice
- 1/4 cup dry white wine
- 1/2 cup grated fresh pecorino Romano cheese
- 1/4 cup chopped fresh chives
- 1 teaspoon grated lemon rind
- 2 tablespoons fresh lemon juice
- 1 tablespoon unsalted butter
- 1/4 teaspoon salt

- 3 tablespoons olive oil
- 1 small loaf of french bread, cut into 1 inch cubes
- 1 teaspoon kosher salt
- 2 large ripe tomatoes, cut into 1 inch cubes, or cherry tomatoes, cut in half
- 1 hot house (or English) cucumber, unpeeled, seeded, and sliced into 1/2 inch thick pieces
- 1 red pepper, seeded and cut into 1 inch cubes
- 1 yellow pepper, seeded and cut into 1 inch cubes
- 1/2 red onion, cut in half and thinly sliced
