- 4 zucchinis, nibby ends removed
- 2 cups sun dried tomatoes soaked in 1 cup boiling water
- 2 fresh tomatoes – I used hot house
- 1/2 cup packed fresh basil leaves, stems removed
- 1/2 cup nutritional yeast + extra for garnish
- 1/4 medium onion, diced – yield 1/4 cup
- 1/4 cup walnuts, roughly chopped + extra for garnish
- 1 garlic clove, minced
- 1 tsp dried oregano
- 1 tsp Himalayan rock salt, or to taste
- freshly ground black pepper, to taste

- 1 bunch chives, sliced, including white part
- 3 slices ginger, chopped
- 4 tablespoons oyster sauce
- 2 tablespoons canola oil
- 3 tablespoons sesame oil
- 1 cup chicken broth
- 1 tablespoon cornstarch, optional
- CHICKEN MARINADE
- 2 tablespoons soy sauce
- 1 teaspoon sugar
- 2 tablespoons sesame oil
- 1/2 teaspoon garlic powder

- 1 can (28 Ounce) Whole Tomatoes With Juice
- 2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
- 1/4 cup Chopped Onion
- 1 clove Garlic, Minced
- 1 whole Jalapeno, Quartered And Sliced Thin
- 1/4 teaspoon Sugar
- 1/4 teaspoon Salt
- 1/4 teaspoon Ground Cumin
- 1/2 cup Cilantro (more To Taste!)
- 1/2 whole Lime Juice
