Heat oil in heavy extra-large deep skillet or flameproof casserole over medium-high heat
- For Gremolata:

- 1 28-ounce can peeled Italian plum tomatoes, crushed

- 1 cup dry white wine
- 6 fresh basil leaves
- 1/2 teaspoon grated lemon peel
- (A traditional topping for osso buco)
- 2 tablespoons minced fresh parsley

- 8 ounces (227 grams) cream cheese, room temperature
- 2 cups (230 grams) confectioners (powdered or icing) sugar, sifted

Gingered Berry Marmalade

1) Crush berries roughly with a fork and combine with orange peel, ginger and lemon juice in a pot
