Cream Cheese Pound Cake with Lime Glaze

- 3 1/4 cups cake flour
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 18 Tbls. (2 1/4 sticks) unsalted butter
- 8 oz. cream cheese
- 3 3/4 cups sugar
- 6 eggs
- 1 tsp. pure vanilla extract
- 3 Tbls. plus 1/4 cup lime juice
- 2 tsp. finely grated lime zest
Zucchini Pizza Casserole

1) Place zucchini in strainer; sprinkle with salt
- 4 cups shredded unpeeled zucchini
- 1/2 tsp salt
- 2 eggs
- 1/2 cup grated parmesan cheese
- 1 cup (4 oz shredded cheddar cheese, divided)
- 2 cups (8 oz0 shredded part-skim mozzarella cheese, divided)
- 1 lb ground beef (lean at least 80%)
- 1/2 cup chopped onion
- 1 can (15 oz) Italian tomato sauce or 1 can (15 oz) tomato sauce with 1/4 tsp oregano, 1/4 tsp basil
- 1 Medium green pepper, chopped
Bacardi Rum Cake

- 1 cup chopped pecans or walnuts
- 18 1/2 oz. package yellow cake mix (preferably with pudding in it)
- 3 eggs
- 1/3 cup oil
- 1/2 cup cold water
- 1/2 cup Bacardi Dark Rum (80 proof)
- Glaze
- 1/4 lb. butter
- 1/4 cup water
- 1 cup granulated sugar
- 1/2 cup Bacardi Dark Rum

- 3 clementine oranges or small tangerines, washed and dried
- 3/4 cup sugar
- 3 cups all-purpose flour
- 6 tablespoons cornstarch
- 1/4 teaspoon fine salt
- 3/4 pound unsalted butter (3 sticks), softened

- 1 tablespoon extra-virgin olive oil
- 1 small onion, diced
- 3 medium carrots, halved lengthwise and sliced
- 3 stalks celery, sliced
- 1 teaspoon chopped fresh thyme
- 2 cups fat-free low-sodium beef or vegetable broth
- 1 9-ounce package small cheese ravioli
- 1 small bunch escarole or 5 cups spinach, roughly chopped
- Kosher salt and freshly ground pepper
- 3 tablespoons grated parmesan cheese
- 8 slices whole-wheat baguette

- 1 cup shredded Cheddar cheese (4 ounces)
- 1 cup shredded Monterey Jack cheese (4 ounces)
- 1/2 cup mayonnaise
- 1/2 teaspoon Paula Deen's House Seasoning (Salt, pepper, garlic powder)
