Cheese Chicken Tortilla Soup Recipe

Sauté oil, garlic and onions in large pan until soft
- 2 tsp. minced fresh garlic
- 1 cup chopped yellow onion
- 2 Tbsp. vegetable oil
- 4 Cups chicken stock
- 1/4 cup green pepper, chopped
- 1 can tomato puree (15 oz.)
- 1 Tbsp. finely minced jalapeño pepper (optional)
- 1 tsp. sugar
- 1/2 tsp. hot sauce (depending on your tolerance for heat you can use anything from the Hottest Hot Sauces including Blair’s Mega Death, 357 Mad Dog, 357 Ghost Pepper Sauce or something mild like Tapatio Hot Sauce)
- 1 tsp. chili powder (optional)
- 1 tsp. Worcestershire sauce
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 Tbsp. flour
- 1/2 Cup water
- 1 lb. cooked chicken, cubed or pulled
- 1 Cup cream
- 1/4 Cup non-fat sour cream
- 8 oz. processed cheese, 1-inch cubes
- 10 (6-inch) colored or yellow corn tortillas, 1/4-inch strips, fried
- Roughly chopped Fresh cilantro (optional)
Anderson's Split Pea Soup

- 2 quarts soft water
- 2 cups Anderson's Green Split Peas
- 1 bunch of celery
- 1 large carrot
- 1 small onion
- 1/4 tsp. of thyme
- 1 pinch of cayenne pepper
- 1 bay leaf
- salt
- pepper
Pesto Lasagna

Peter Maluk gave me this recipe - and it is fantastic
- Pesto:
- 5-6 cloves young garlic; or 3-4 cloves mature garlic
- Coarse Salt
- Whole black peppercorns
- 4 cups roughly chopped fresh basil leaves
- 3/4 cup virgin olive oil
- 1/2 cup lightly toasted pine nuts
- 2/3 cup Parmesan and Pecorino Mixed
- Bechamel Sauce:
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 3 cups half and half
- 1 cup heavy cream
- Salt and pepper
- Nutmeg
- Bouquet garni (Thyme, parsley, bay leaf, black peppercorns, onion, and garlic)
- 2 -egg pasta dough
- 1/3 cup Parmesan and bread crumbs
- 2 tablespoons sweet butter
Cream of Fresh Tomato Soup

Heat the olive oil in a large, heavy-bottomed pot over medium-low heat
- 3 tablespoons good olive oil
- 1 1/2 cups chopped red onions (2 onions)
- 2 carrots, unpeeled and chopped
- 1 tablespoon minced garlic (3 cloves)
- 4 pounds vine-ripened tomatoes, coarsely chopped (5 large)
- 1 1/2 teaspoons sugar
- 1 tablespoon tomato paste
- 1/4 cup packed chopped fresh basil leaves, plus julienned basil leaves, for garnish
- 3 cups chicken stock, preferably homemade
- 1 tablespoon kosher salt
- 2 teaspoons freshly ground black pepper
- 3/4 cup heavy cream
- Croutons, for garnish

- 6 corn tortillas cut in strips
- 2 Chicken breasts cooked/cut up
- 1 can cream of chicken soup
- 1/2 cup chicken broth
- 1/2 cup canned milk or half/half
- 1/2 cup chopped onion
- 1 small can green chiles
- 1 can sliced black olives
- 8 oz. salsa
- 1 lb. Mexican cheese, grated
Hot Pimento Cheese Dip

- 2 cups shredded sharp Cheddar cheese (8 ounces)
- 2 cups shredded Monterey Jack cheese (8 ounces)
- 1 jar (4 ounces) chopped pimientos, well drained
- 1/2 cup mayonnaise
- 1 1/2 teaspoons grated yellow onion
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

- 16 oz. mayonnaise
- 1/2 lb. crab meat*
- Worcestershire sauce
- Red pepper flakes
- Dried onion
- Lemon juice
- 1 generous handfuls of Parmesan cheese
- Parsley
- Crackers, bread, or veggies to dip
- *Note: 1 Costco can of crab makes two. Also, one can use imitation crab meat if preferred.
