Spicy-Sweet Ribs and Beans

Slow cookers don't brown food, so here we broil the ribs for extra flavor before adding them to the pot
- 2 (16-ounce) cans pinto beans, drained
- 4 pounds country-style pork ribs, trimmed
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 medium onion, chopped
- 1 (10.5-ounce) jar red jalapeño jelly
- 1 (18-ounce) bottle hickory-flavored barbecue sauce
- 1 teaspoon green hot sauce

Preheat oven to 350°F. Grease an 8-inch square baking pan
- 1/2 cup butter, room temperature
- 1/4 cup brown sugar
- 1/2 cup sugar
- 1 large egg
- 1 tsp vanilla extract 1
- 1/3 cups all purpose flour
- 3/4 cup graham cracker crumbs (approximately 7 full graham crackers)
- 1 tsp baking powder
- 1/4 tsp salt
- 2 super-sized (5 oz.) dark chocolate bars (e.g. Hershey’s)
- 1 1/2 cups marshmallow creme/fluff (not melted marshmallows)
Caramel Creme Sandwich Cookies

To make the cookies, in a large bowl, cream the butter and sugar
- For the cookies:
- 1 1/2 cups firmly packed brown sugar
- 2 cups (4 sticks) butter
- 2 egg yolks
- 4 cups flour
- For the frosting:
- 1/2 cup (1 stick) butter
- 2 teaspoons vanilla extract
- 5 cups confectioners’ sugar
- 6 tablespoons milk

- 1 yellow onion, diced
- 1 red bell pepper, diced
- 1 jar of salsa, your choice (I used Trader Joes' Organic tomatillo roasted yellow chile salsa)
- 1 QT Chicken broth
- 1 tsp cumin
- 1/2 tsp corriander
- 1 TBS minced garlic, or 3 cloves
- 1/2 cup sweet corn (fresh or frozen, thawed)
- 1/2 cup black beans, cooked (I used canned)
- 1/4 bunch of fresh cilantro, chopped

- 1 flower shaped cookie cutter (1.25″ wide X .75″ tall)

- 1 bag (11.5oz) Ghirardelli 60% Cacao Bittersweet Chocolate Chips

- 3 eggs
- 1 cup sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 bag (12oz) Ghirardelli Semi Sweet Chocolate Chips
