Almond Sponge Cake

Toasting the almonds gives this sponge cake a golden color and a nuttier flavor
- 1/3 cup whole almonds
- 1/3 cup cornstarch
- 1 tablespoon unsalted butter
- 2 tablespoons all-purpose flour, for pans
- 3 large eggs, separated
- 1 teaspoon pure vanilla extract
- 1/2 cup sugar
- Pinch of salt
Chicken and Brie Sub Sandwich

1. Cut bread horizontally in half; spread inside top and bottom evenly with mustard, and sprinkle with tarragon
- The tang of a Granny Smith apple, the creaminess of French brie--put them together with rotisserie chicken from the deli for a great sandwich in a snap.

- 4 oz Brie cheese, sliced
- 1/2 Granny Smith apple, unpeeled, thinly sliced
Greek Chicken Salad

1. In small bowl or tightly covered container, mix or shake dressing ingredients

- 3/4 cup Italian dressing
- 1 1/2 teaspoons dried dill weed

- 12 cups loosely packed torn romaine lettuce
- 1 deli rotisserie chicken, meat removed from bone, thinly sliced
- 1 pint (2 cups) cherry tomatoes, halved
- 1 large cucumber, halved, seeded and sliced
- 3/4 cup pitted kalamata olives
- 6 thin slices red onion, separated into rings, rinsed under cold water, patted dry
- 1 package (4 oz) crumbled feta cheese (1 cup) or use Goat Cheese
Walnut-Chicken Salad

- 1/2 cup mayonnaise or salad dressing
- 1/4 cup Yoplait® Original 99% Fat Free lemon burst yogurt
- 1/2 teaspoon sugar
- 1/4 to 1/2 1/4 to 1/2 teaspoon ground ginger
- Dash salt
- Salad
- 3 cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
- 3/4 cup chopped celery
- 1/2 cup chopped walnuts
- 1 cup sliced or quartered strawberries

Peanut Butter Brownies

1. Heat oven to 350°F. Grease bottom only of 13x9-inch pan with shortening or cooking spray
- 1 box (1 lb 6.5 oz) Betty Crocker® Original Supreme brownie mix
- 1/3 cup vegetable oil
- 1/4 cup water
- 2 to 3 2 to 3 eggs
- 1/3 cup packed brown sugar
- 1/3 cup crunchy peanut butter
- 1 egg
- Peanut Butter Frosting
- 1 cup Betty Crocker® Rich & Creamy vanilla frosting (from 1-lb container)
- 1/3 cup peanut butter
- 2 to 3 2 to 3 teaspoons milk
Brownie on a Stick

1. Heat oven to 350°F. Line 13x9-inch pan with foil so foil extends about 2 inches over sides of pan
- 1 box (1 lb 6.5 oz) Betty Crocker® Original Supreme brownie mix (with chocolate syrup pouch)
- Water, vegetable oil and eggs called for on brownie mix box
- 24 craft sticks (flat wooden sticks with rounded ends)
- 1 cup semisweet chocolate chips (6 oz)
- 2 teaspoons shortening
- Assorted Betty Crocker® Decorating Decors candy sprinkles

- 5 cups water
- 2 cups seven-grain cereal
- 1 medium apple, peeled and chopped
- 1 cup unsweetened apple juice
- 1/4 cup dried apricots, chopped
- 1/4 cup dried cranberries
- 1/4 cup raisins
- 1/4 cup chopped dates
- 1/4 cup maple syrup
- 1 t cinnamon
- 1/2 t salt
- chopped walnuts, optional

- 1 t chopped garlic
- 2 T olive oil
- 1 C chopped fresh spinach

- 1 C prepared Aldredo sauce
- 1/8 C prepared basil pesto sauce
