Ham-and-Gruyere Thumbprints

Preheat oven to 400 degrees
- 1/2 cup (1 stick) unsalted butter, cut into large pieces
- 1/2 teaspoon coarse salt
- 1 cup water
- 1 cup all-purpose flour
- 4 large eggs
- 1/2 teaspoon freshly ground pepper
- 1/2 cup finely chopped or ground Black Forest ham (2 ounces)
- 1 cup finely shredded Gruyere cheese, plus 36 cubes (1/2 inch) for centers (8 ounces total)
Simple Syrup for Orange JUlius

Orange Julius - Simple Syrup

* Ok, years ago they sold me the powder
- 6 * 6 oz Fresh Squeezed orange juice or any orange juice will work.
- 6 * 6 oz Clear water
- 3 * 3 oz simple syrup
- 8 * 8 oz shaved or crushed ice
- 1 * 1 teaspoon of powdered milk or instant vanilla pudding mix
Mushroom-Polenta Diamonds

To roast peppers, char them over a gas burner or under the broiler, turning them as they blacken
- 6 ounces shiitake mushrooms, stems removed, and caps wiped clean
- 1 tablespoon unsalted butter, plus more for baking sheet
- 1 small onion, minced
- 2 tablespoons port or dry white wine
- 6 tablespoons heavy cream
- 1 teaspoon coarse salt, plus more for seasoning
- Freshly ground pepper
- 1 cup instant polenta
- 1/2 cup freshly grated Parmesan cheese (2 ounces)
- 2 roasted red bell peppers, cut into thin slivers, for garnish (optional)
- Mascarpone cheese, for garnish (optional)
Chocolate Sauce

In a small saucepan, combine all ingredients
- 14 ounces (1 can) sweetened condensed milk
- 2 ounces unsweetened chocolate, coarsely chopped
- 2 ounces semisweet chocolate, coarsely chopped
- 3/4 cup heavy cream
Caramelized Onion Tartlets

- All-purpose flour, for dusting

- 3 tablespoons butter
- 6 tablespoons sugar

- 4 * 4 cups semisweet chocolate chips
- 2 * 2 cups chopped walnuts (optional)
