- 1 head cauliflower, chopped
- 1 (8 ounce) package elbow macaroni
- 1 cup plain Greek yogurt
- 1 cup low-sodium chicken broth
- 2 tablespoons olive oil
- 4 ounces reduced-fat Cheddar cheese,
- cubed
- 3 tablespoons nutritional yeast flakes
- 1 teaspoon mustard powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- 1/8 teaspoon ground nutmeg
- 1/4 cup grated Parmesan cheese
- 1/2 cup panko bread crumbs
Spring Green Fried Rice

- 1 tsp toasted sesame oil
- 1 Tbsp vegetable oil

- 3/4 c shelled frozen edamame, thawed
- 1/2 c frozen peas, thawed
- 2 c cooked brown rice, chilled

1.Cook the pasta according to the package directions; drain and return it to the pot
- 1/2 cup peanut butter
- 3 tablespoons rice vinegar
- 3 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon grated fresh ginger
- 8 ounces spaghetti (1/2 box)
- 1 1/2 cups shredded rotisserie chicken
- 1 red bell pepper, sliced
