For the cake: Place an oven rack in the center of the oven
- Cake:
- Vegetable oil cooking spray
- 2 cups flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon fine sea salt
- 2 sticks (1 cup) unsalted butter, at room temperature
- 1 1/2 cups sugar
- 2 eggs, at room temperature
- 1 cup mascarpone cheese, at room temperature
- 1 teaspoon pure vanilla extract
- Icing:
- 2 egg whites
- 1/8 teaspoon cream of tartar
- 1/4 cup sugar
- 1 teaspoon coffee extract

- 1 tsp soda

- 3/4 cup sour cream
- 3 cups cake flour (not self-rising), sifted
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/4 cups sugar
- 4 large eggs
- 1 tablespoon pure vanilla extract
- Chocolate Ganache
- 4 cups heavy cream
- 2 pounds best-quality semisweet chocolate, finely chopped
- 1/4 cup light corn syrup
- 1/4 teaspoon salt

- 6 eggs
- 1/4 cup mayonnaise
- 2 tablespoons finely chopped onion
- 3 tablespoons sweet pickle relish
- 1 tablespoon prepared horseradish

- paprika, for garnish

Rich Belgian Style Waffles

- 1 egg yolk
- 1 c fat free sour cream
- 1/2 c skim milk
- 3 tbs melted butter
- 1 c flour
- 2 tsp sugar
