Light Custard Berry Parfaits

Ingredients

  • 1/4 cup sugar
  • 4 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1 2/3 cups 1% milk
  • 2 eg yolks, lightly beaten
  • 3/4 teaspoon vanilla xtract
  • 3 cups mixed berries

Preparation

Step 1

In a small saucepan, combine the sugar, cornstarch and salt. Stir in milk until smooth. Cook and stire over medium hjigh heat until thickened and bubbly. Reduce heat. cook and stir 2 minutes longer. Remove from the heat.

Stir in a small amount of hot filling into egg yolks, return all to the pan, stirring constantly. Bring to a gentle boil. Cook and stir 2 minutes longer. Remove from the heat.

Gently stir in vanilla. Cool to room temp. Just before serving, sppon 1/4 cup of berries into heat class. Top wtih 2 Tablespoons of custard.
