German Chocolate Pie

Melt chocolate & butter over low heat
- 1 9 inch unbaked pie shell (deep dish)
- 1 4 oz package German sweet chocolate
- 1/4 cup butter
- 1 12 oz evaporated milk
- 1 1/2 cups sugar
- 3 TBSP cornstarch
- 1/8 tsp salt
- 2 eggs
- 1 tsp vanilla
- 1 1/2 cups coconut
- 1 cup chopped pecans
Fried Rice

Fabulous recipe that is so easy
- 3 TBSP oil
- 2 lightly beaten eggs
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 cup chopped meat (poultry, shrimp,etc)
- 1/2 cup frozen sweet green peas
- 3 cups cooked rice
- 1/4 cup soy sauce
- 1 tsp chili-garlic sauce
- sliced green onions & chopped almonds for garnish
Fish Tacos with Mango Salsa

Place fish in a shallow dish
- mango salsa:
- 6 (6oz) flounder fillets
- 1 lime
- 2 TBSP chili powder
- 2 tsp salt
- 2 tsp ground cumin
- 1/2 tsp ground red pepper
- 1 1/2 cups yellow cornmeal
- vegetable oil
- 4 to 6 flour or corn tortillas
- 1 mango, chopped
- 1 jalapeno, seeded and finely chopped
- 1 garlic clove, minced
- 1 TBSP fresh lime juice
- 1 TBSP finely chopped red onion
- 1 TBSP chopped fresh cilantro
- 1/4 tsp salt
Banana Crush Punch

Combine sugar and water. Heat over low heat stirring until sugar is dissolved
- 4 cups sugar
- 6 cups wayter
- 1- 46 oz can pineapple juice
- 1-12 oz can frozen lemonade, thawed
- 2-12 0z can orange juice, thawed
- 6 bananas
- 6- 28 oz bottles lemonlime beverage chilled
New Zealand Holly Cookies

In a medium mixing bowl, combine flour, sugar, cinnamon, baking powder & 1/4 tsp salt
- 2 cups flour
- 1 cup sugar
- 1 tsp cinnamon
- 3/4 tsp baking poweder
- 1/2 cup butter
- 1 slightly beaten egg
- 1/4 cup milk
- 2/3 cup rasberry jam
- 2 cups sifted powdered sugar
- 1/2 tsp vanilla
- 2 to 3 TBSP milk
- red cinnamon candies
Dump Cake

Pour crushed pinneapple, cherry pie filing and yellow cake mix
- Yellow cake mix
- 1 can cherry pie filling
- 1 can crushed pinneapple
- 1 stick of butter
Grilled Chicken Quesadillas

Combine first 5 ingredients in a shallow dish or zip top freezer bag
- 1/3 cup lime juice
- 1 TBSP olive oil
- 1 TBSP minced fresh marjoram or 1 tsp dried marjoram
- 1 tsp salt
- 1 tsp pepper
- 1 / 1/2 pounds skinned and boned chicken breasts
- 12 (6 in) flour tortillas
- 1 cup (4 oz) shredded Mexican four cheese blend
- Pesto
- 1 1/2 cups fresh cilantro leaves
- 2 garlice cloves, chopped
- 1/3 cup olive oil, divided
- 2 TBSP pecans,
- 2 TBSP pine nuts
- 1/4 cup shredded parmesan
Stromboli

Fabulous recipe. Learned this one during the summers at the lake house while the boys were young
- 1/2 lb ground beef
- 1/2 cup chopped onion
- 2 TBSP mustard
- 8 slices American cheese
- 2 cups grated mozarella
- 1/2 cup Parmesan cheese
- 1 (4 oz) sliced pepperoni
- 1 (8 oz) sliced canadian bacon
- 1 tsp olive oil
San Antonio Squash Casserole

Different kind of recipe from my other Squash Casserole, the peppers make it more spicy
- 2 tablespoons butter or margarine
- 2 cupes yellow onion, diced
- 4 pounds yellow squash, sliced 3/8 thick
- 8 oz velvetta, cut in 3/4 inch cubes
- 1 cup cream of celery soup (undiluted)
- 1 cup green chiles (diced)
- 1/2 cup bread crumbs
Splendid Strawberries

Melt butter in saucepan. Stir in ingredients
- 1 TBSP butter
- 1 quart strawberries
- 1/4 cup splenda
- 1 TBSP balsamic vinegar
- Low fat ice cream
