San Antonio Squash Casserole

Different kind of recipe from my other Squash Casserole, the peppers make it more spicy. Love this one too!

    tablespoons butter or margarine

    cupes yellow onion, diced

  • 4

    pounds yellow squash, sliced ⅜ thick

  • 8

    oz velvetta, cut in ¾ inch cubes

  • 1

    cup cream of celery soup (undiluted)

  • 1

    cup green chiles (diced)

  • ½

    cup bread crumbs


Preheat oven to 350. In a 14 inch pan, melt butter and saute onion. Add squash and cook until slightly softened. Squash will release a lot of water,which must be drained. Mix squash and onion with cheese, soup, green chiles, plane in oiled casserole dish (or sprayed with Pam). Cover with bread crumbs and bake about 20 minutes or until hot throughout. Makes 10 big servings. Calories 210 Fat 9 grams Fiber 7 grams
