Penne alla Salsa Cruda di Pomodoro

Bring 2 gallons of water to a boil
- 1 lb Italian plum tomatoes
- 3 oz parmigiano-reggiano
- 3 oz fresh arugula
- 1/3 c extra-virgin olive oil
- 1 t minced garlic
- 16 leaves fresh basil, torn
- 1 t salt
- 1 T aged balsamic vinegar
- 1 lb penne
Spaghetti with Grape Tomatoes and Arugula

Cook pasta according to package instructions
- 3/4 lb spaghetti
- 1/4 c extra virgin olive oil
- 4 garlic cloves, thinly sliced
- 1/2 c pine nuts
- 1 t chile flakes
- 1 pint grape tomatoes
- 1 pinch of salt
- 1/2 bunch fresh arugula, shredded
- 1/2 bunch garlic chives
- freshly grated parmigiano-reggiano
Veal Scallopini

- 2 lbs veal cubes
- flour
- salt
- pepper
- olive oil
- onions, sliced
- mushrooms
- oregano
- basil
- 1 clove garlic
- 14 oz can tomatoes
- grated cheese
Raspberry Crème Brulee

Preheat oven to 300. Place 7 raspberries in each dish; set aside
- 50-60 raspberries
- 2 1/2 c heavy cream
- 8 egg yolks
- pinch of salt
- 1/3 c sugar + 12 t for topping
- 1 t pure vanilla extract

- 2 large cans peeled, chopped tomatoes

Creamy Asparagus Soup

Bring a medium pot of water to a boil; add asparagus (make sure water covers asparagus)
- 1 lb asparagus, cut into 1" pieces
- 1 1/2 t butter
- 1 small onion, coarsely chopped
- 1/2 leek, trimmed of all but 1" of dark-green top, sliced
- 1 celery stalk, sliced
- 1/4 t salt
- 2 3/4 c low-sodium chicken broth
- white pepper
- pinch of nutmeg (optional)
- 1 T pine nuts
Potato Leek Soup

Bring potatoes, leeks and broth to a boil
- 2 large potatoes, peeled and diced
- 2 large leeks, sliced thin
- 4 c chicken broth
- 1/2 t salt
- 1/4 t pepper
- 1/4 c heavy cream
- 1/8 t nutmeg
- 2 cloves garlic, crushed
- 4 T olive oil
- 4 T parmesan cheese
- (Recipe can be doubled.)
White Chocolate Cheesecake

Combine crackers, oats, and 1/4 cup sugar
- 1 package graham crackers (24 squares)
- 1 c quick-cooking rolled oats
- 1/4 c sugar
- 6 T melted butter
- 3 8 oz packages cream cheese
- 1 c sugar
- 1 T crème de cacao
- 15 oz white chocolate candy bars with almonds, chopped
- 4 egg whites
- 1/8 t cream of tartar
- 1 T powdered sugar
- 2 c dairy sour cream
- 2 T sugar
- 1 T creme de cacao
- kiwi slices (optional)
- chocolate shavings (optional)
Blackberry Cobbler

Preheat oven to 425. Have ready a 9" round ovenproof dish 2 or more inches deep
- 1 1/2 c all-purpose flour
- scant 1/4 t salt
- 5 T unsalted butter
- 4 T vegetable shortening
- 4-5 T ice water
- 6 c blackberries
- 3/4 c sugar
- 4 T butter
- Heavy cream, whipped cream or ice cream
- *Note: chill the butter and shortening thoroughly in the freezer.
