Penguin Cake

This cake is quite easy, but you must start ahead so the Amaretto can soak through the angel food cake
- 1 angel food cake
- 6 tablespoons amaretto
- 2 tablespoons sugar
- 3 tablespoons powdered sugar
- 12 ounces semisweet chocolate chips
- 1/4 cup toasted slivered almonds
- 3 eggs
- Chocolate shavings for garnish
- 1 tablespoon vanilla extract
- 1 1/2 pints whipping cream divided
- Dash salt
Lemon Berry Tart

Prep: 15 minutes, Bake: 12 minutes, Chill: 1 hour
- 1/2 cup lemon curd
- 1 8ounce package softened cream cheese
- 3 cups berries or sliced fruit

Fish Tacos....CLEAN DIET

Easy and very good. Healthy
- If Sauteeing…use:
- FISH TACOS…CLEAN…really good and easy
- Sautee or bake
- 2 tsp coconut oil in a large dutch oven.
- Cook for about five minutes on each side of fish.
- If baking
- Put fish in a large baking pan doused with lemon juice and salted to taste. Cook at 375 degrees for 10 minutes.
- Wash and dry a large romaine leaf for each taco.
- Chop:
- Cucumber
- Celery
- Radish
- Napa cabbage
- Cilantro
Cranberry Pomegranate Cider

- 3/4 cup sugar

- 4 Tbs. extra virgin olive oil
- 1 clove garlic, minced
- 2 Tbs. fresh parsley, minced
- Kosher salt

Lemon Mini Muffins with Lime-Scented Sugar

Makes 12 mini muffins or six standard-sized muffins
- 1 1/4 C flour
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1/8 tsp baking soda
- 1/8 tsp nutmeg
- 1/4 C lemon-flavored yogurt
- 2 T minced fresh lemon*
- 1/2 tsp vanilla
- 6 T sugar
- 1/2 stick unsalted butter, softened, (4T)
- 1 egg
- 1/4 C sugar
- Chopped zest of 1 lime
- 3 T unsalted butter, melted
