- 1 package of pudding-included German Chocolate Cake Mix
- 1 6 ounce package (1 cup) semi-sweet chocolate chips
- 1/2 cup rolled oats
- 1/2 cup oil
- 2 eggs, slightly beaten

- "You can easily make these little Santas as a holiday dessert yourself. All you need are strawberries, whipped cream, and some chocolate sprinkles. Your kids will love these yummy treats and can help put them together."

Chicken and Herbed White Beans

1. For chicken, heat oven to 375F
- Chicken Ingredients
- * 2 chicken breasts or equivalent chicken tenders without skin
- * 1 tomato, chopped
- * 1/2 onion, chopped
- * 8 pitted calamata olives, halved
- * 1 tablespoon olive oil
- * 1 teaspoon red wine vinegar or balsamic vinegar
- * 1 small bunch fresh basil, chopped
- Bean Ingredients
- * 1 tablespoon olive oil
- * 2 cloves garlic, minced
- * 1 can (15 or 16 ounces) white beans, rinsed and drained
- * 1 tomato, chopped
- * 1/4 cup chopped fresh mixed herbs, your choice
- * 1 teaspoon red wine vinegar or balsamic vinegar
- * Salt and pepper (optional)

- Cake:
- 4 C white cake mix
- 1 1/2 C applesauce
- Icing:
- 4 T butter
- 1/2 C brown sugar
- 1/2 C powdered sugar
- 1/4 C milk
Scrambled Eggs with Fresh Salsa

There are two words for this dish: easy and nourishing
- Scrambled Eggs
- 1 tablespoon olive oil
- 1/2 cup sliced mushrooms
- 1/2 cup sliced green onions or scallions
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped yellow or green bell pepper
- 6 whole eggs or 6 egg whites
- 1 teaspoon salt
- 1/4 cup skim milk
- Salsa
- 1 bunch cilantro (1/2 cup cilantro leaves)
- 2 cups chopped tomatoes
- 1/4 cup diced bell pepper
- 1/4 cup diced red onion
- 1 small jalapeno pepper, seeded and minced
- 2 tablespoons freshly squeezed lime juice
- Garnish
- 6 slices whole grain bread
- 6 slices honeydew melon
Guacamole

1 Cut avocados in half. Remove seed
- 2 * 2 ripe avocados
- 1/2 * 1/2 red onion, minced (about 1/2 cup)
- 1-2 * 1-2 serrano chiles, stems and seeds removed, minced
- 2 * 2 tablespoons cilantro leaves, finely chopped
- 1 * 1 tablespoon of fresh lime or lemon juice
- 1/2 * 1/2 teaspoon coarse salt
- * A dash of freshly grated black pepper
- 1/2 * 1/2 ripe tomato, seeds and pulp removed, chopped
- Garnish with red radishes or jicama. Serve with tortilla chips.
Salmon with Fennel Greens...terrific!!!

Really healthy with anti inflammatory agents to help with heart disease and auto immune disease
- 1/4 C olive oil
- 2 T minced onion
- 1/2 tsp gray sea salt of pink Himalayan salt
- 2 T chopped fennel greens, divided
- 1 T fresh dill or 1 tsp dried dill
- 1 large fennel bulb, quartered, then cut lengthwise into 1/4 inch slices
- 1/4 C vegetable stock of filtered ok water
- 2 7 oz salmon fillets
- 1 T raw honey or maple syrup
- 2 T lemon juice
- optional...1/4 fresh dill for garnish
Rosemary and Garlic Roast Leg of Lamb

Preheat the oven to 400 degrees
- SAUCE:
- 1 leg of lamb, bone in (about 6 to 7 1/2 Lbs.)
- 1/4 C fresh lemon juice
- 8 cloves garlic, minced
- 3 T chopped fresh rosemary leaves
- 1 T salt
- 2 tsp coarsely ground pepper
- 1 C chopped fresh herbs (combination of rosemary, chives and parsley)
- 2 C diced onions
- 2 C chicken stock
- 1 C red wine
Large Chocolate Chip Cookies in CD Wrapper

Chocolate Chip Cafe Cookies (These are like the big, fat, chewy cookies that you find in cafes – only better!)
- Makes 18 big cookies
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, melted
- 1 cup packed brown sugar
- 1/2 cup white sugar
- 1 tablespoon vanilla extract
- 1 egg
- 1 egg yolk
- 2 cups semisweet chocolate chips
Oatmeal Pecan Cookies...FABULOUS

Preheat oven to 350 degrees
- OATMEAL CHOCOLATE CHIP AND PECAN COOKIES
- These easy drop cookies are crisp on the outside and slightly chewy on the inside. Chocolate minichips disperse better in the batter, but you can use regular chips.
- 1 1/4 C. flour
- 1 C. regular oatmeal
- 3/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp salt
- 3/4 C. sugar
- 1/2 C. packed brown sugar
- 1/3 C. butter, softened
- 1 1/2 tsp vanilla
- 1 large egg
- 1/4 C. chopped pecans, toasted
- 1/4 C. semisweet chocolate chips
- 1/2 C. dried cranberries
