Chicken Chili

Really good
- 1 lb of chicken tenders, chopped
- 1 medium onion, chopped
- 1 T olive oil
- 2 cloves of garlic, minced
- 28 oz of chicken broth
- 1 4 oz can of chopped green chiles
- 2 tsp of cumin
- 2 tsp of oregano
- 1 tsp of cayenne pepper
- 3 14 oz cans of northern great beans, divided and drained
- 1 C of shredded Monterey Jack cheese
- 1 small carton of sour cream
Greek Salad

In a salad bowl, combine salad greens, tomatoes, cucumber, onion, olives and cheese
- 6 C. torn mixed greens or romaine
- 2 medium tomatoes, cut into wedges
- 1 small cucumber, peeled, halved lengthwise and thinly sliced
- 1 small red onion, cut into thin wedges
- 1/2 C. pitted kalamata olives
- 1/2 C. crumbled feta cheese....2 oz
- 1 recipe for Greek Vinaigrette
- 2 small pita bread rounds, cut into wedges
Fresh Cabbage and Tomato Salad

In large bowl, mix cabbage, tomatoes and radishes
- 1 head cabbage thinly sliced
- 2 tomatoes cut into wedges
- 1 cup radishes sliced
- 1/4 teaspoon salt
- 2 teaspoons olive oil
- 2 tablespoons rice vinegar
- 1/2 teaspoon ground red pepper
- 2 tablespoons cilantro freshly chopped
Greek Salad

In a large salad bowl, combine the tomatoes, cucumbers, scallions, cheese, and olives
- Dressing:
- 2 tomatoes quartered
- 1 cucumber peeled and sliced
- 5 scallion thinly sliced
- 4 ounces crumbled feta cheese
- 16 kalamata olives
- 1/2 head Romaine lettuce torn
- 3 tablespoons red wine vinegar
- 2 cloves garlic minced
- 1/2 teaspoon dried oregano
- 1/8 teaspoon black pepper
- 3 tablespoons olive oil
Grape Tomato and Avocado Salad...Easy

Use as a salad or appetizer served with tortilla chips
- 1 pint grape tomatoes, halved
- 1/4 white onion, chopped
- 1 T olive oil
- 1 T fresh lemon juice
- 1/2 C fresh parsley or cilantro or mixture of both, chopped
- 2 avocados, diced
- Sea salt
Bananaberry Bread

Delicious and easy to make
- Optional:
- 1 1/2 C sugar
- 1/2 C butter
- 2 eggs
- 1 1/2 C ripe mashed bananas, about 3 or 4 medium
- 1 tsp vanilla
- 1/2 buttermilk
- 2 1/2 C sifted flour
- 1 tsp baking soda
- 1/2 chopped walnuts
- 1 C fresh or frozen (thawed and drained) blueberries
- Can add a mixture of cinnamon and sugar on tops of breads before cookine
- OR
- dust each cooked bread with sifted powdered sugar
Lemon Artichoke Romaine Salad

Combine 1st 3 ingredients and romaine
- 4 Italian plum tomatoes sliced
- 1 (14-ounce) can ripe pitted olives
- 3 tablespoons water
- 3 tablespoons lemon juice
- 3 tablespoons olive oil
- 2 cloves garlic minced
- 1 teaspoon salt
- 1 teaspoon coarsely ground pepper
- 1/3 cup shredded Parmesan cheese
- 10 cups torn Romaine lettuce
- 2 cans artichoke hearts, chopped
Granola

- Granola
- 2 1/2 C old fashioned oats
- 1/2 C slivered Almonds
- 1/3 C craisins
- 1/2 C maple syrup or honey
- 1/4 tsp salt
- 1/4 tsp cinnamon
- Greek yogurt, if desired
- Heat oven to 300 degrees. Coat a large rimmed baking sheet with nonstick spray.
- In medium bowl, combine the oats, almonds, craisins, maple syrup, salt, and cinnamon. Stir well until combined, then spread onto prepared baking sheet. Bake for 35 minutes, stirring halfway through or until golden brown.
- Remove baking sheet to wire rack and let cool completely. Add to Greek yogurt, if desired.
Lemon Chicken

Preheat oven to 425 degrees
- 1 3lb chicken, cut into serving pieces
- 2 lemons, sliced
- 2 tablespoons oregano
- Salt and pepper to taste
Chocolate Souffle (Roy's Restaurant)

BATTER Make the souffle batter the day before you'll serve the dish
- 6 T unsalted butter
- 4 oz. semisweet chocolate
- 1/2 C sugar
- 1 1/2 T cornstarch
- 2 eggs plus 2 more egg yolks
- Fresh raspberries....optional
