Tortellini Salad with Pesto Vinaigrette

In large saucepan, cook tortellini in boiling water until tender
- Basil Pesto:
- 1 (16-ounce) package fresh cheese tortellini
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- Salt and pepper to taste
- 1 (4-ounce) can sliced olives
- 2 medium tomatoes, chopped
- 1 medium garlic clove, peeled
- 1/4 cup grated Parmesan cheese
- 1 cup fresh basil leaves
- 1/4 teaspoon salt
- 1/4 cup pine nuts
- 1/4 cup olive oil
Tri-colored Pasta Salad

An easy do-ahead recipe. Can add just about anything you like to this salad
- 3 bags of tri-colored fusilli cooked
- 2 12-ounce cans white tuna in water, drained or shredded chicken breasts
- 1 red onion chopped
- 1 orange bell pepper chopped
- 1 red bell pepper chopped
- 8 roma tomatoes chopped and seeded
- 20 Kalamta olives, sliced to taste
- 3 cans chopped artichoke hearts
- 8 ribs chopped celery
- 3 can chopped hearts of palms
- Bernsteins cheese fantastico dressing to taste
Chocolate Custard

Prep 15 minutes and bake 25 minutes
- 2 1/4 C half and half
- 1 - 6 oz. bag semisweet chocolate chips (1 Cup)
- 4 eggs
- 1/2 C sugar
- 1/4 tsp salt
- Sweetened whipped cream, if desired
Walnut and Romaine Salad

Combine salad ingredients in a large bowl
- Dressing:
- 1 hear Romaine lettuce, torn into bite size pieces
- 1 red delicious apple, cut into chunks
- 4 ounces bleu cheese or gorgonzola, crumbles
- 1/2 cup coarsely chopped walnuts, lightly toasted
- 2 teaspoons Dijon mustard
- 2 cloves garlic, minced
- 1/4 cup white wine vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup olive oil
Chicken Chili

I double the recipe so it lasts two days
- Ingredients
- 2 cloves garlic, minced
- 1/2 cup diced sweet onion
- 2 -3 chicken breast fillets (1.5 lbs) cut into bite size pieces (optional skinless, boneless thighs or a combination of breasts & thighs)
- 1 (14.5 ounce) can fire roasted tomatoes with liquid
- 1 (6 ounce) can tomato paste
- 1 1/2 cups chicken broth, fat free, low sodium (optional vegetable broth or water)
- 2 tablespoons chili powder
- 1/2 teaspoon cayenne pepper (more or less to taste)
- 1/2 teaspoon cumin
- 1/2 teaspoon black pepper
- Kosher or sea salt to taste
- 1 (15.5 ounce) can Cannellini or Navy beans, drained and rinsed
- 1 (15.5 ounce) can Kidney beans, drained and rinsed
- 1/4 cup reduced fat cheddar cheese for garnish
Low Cholesterol Salad Dressing

Combine all ingredients and beat
- 1/2 cup olive oil
- 2 tablespoons lemon juice or vinegar
- 1/4 tablespoons paprika
- 1/8 teaspoon dry mustard
- 1 teaspoon sugar
Cucumber-Watercress Tea Sandwiches

Using paper towels, pat the cut surfaces of the cucumber slices to remove any excess moisture
- 32 thin slices peeled english cucumber
- 1/2 stick unsalted butter at room temperature
- 1 cup soft cream cheese
- 8 thin slices white sandwich bread crusts removed before buttering
- 1/2 cups watercress leaves plus more for garnish OR
- 1/2 cup chopped chives plus more for garnish
- 1/2 cup radish, onion or sunflower sprouts
- Coarse salt, preferably fleur de sel
Amaretto Pumpkin Mousse Pie

Soften gelatin in Amaretto
- 1 envelope unflavored gelatin
- 1/2 C amaretto
- 1 - 16 oz. can pumpkin
- 4 eggs, separated
- 1/2 C brown sugar
- 1/2 C white sugar
- 1 baked deep dish 9-inch pie shell
- 1/4 C butter
- 1 tsp cinnamon
- Salt
- 1/4 tsp cloves
- Pinch of cream of tartar
- 1 C cream, whipped
Cilantro Marinade

Mix all ingredients together
- This marinade is delicious on Grilled Swordfish (page 64) or eggplant.

- 1 bunch cilantro, leaves only, finely chopped
- juice of 1 lemon
- 3 cloves garlic, minced
- 1/2 cup olive oil
- 1/4 tsp freshly ground black pepper
Slow Cooker Beef Stew ...EXCELLENT!

Place meat in slow cooker
- 2 pounds beef stew meat, cut into 1 inch cubes
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 clove garlic, minced
- 1 bay leaf
- 1 teaspoon paprika
- 2 teaspoon Worcestershire sauce
- 1 onion, chopped
- 2 cups beef broth
- 3 potatoes, diced
- 1 stalk celery, chopped
- 1 small can of olives
- 1 c of garbanzo beans
- 1 box of fresh sliced mushrooms
