Roasted Leg of Lamb

Preheat oven to 350°F. Blend mustard, soy sauce, rosemary, garlic, and ginger in a bowl
- 1 6- to 8-lb leg of lamb (or chevon baby goat)
- 1/2 cup Dijon-style mustard
- 1/4 cup soy sauce
- 1 tbsp minced fresh rosemary
- 1 clove garlic, slivered
- 1 1-inch piece of fresh ginger root, peeled and minced
- 2 tbsp olive oil
Oatmeal Cookies

1 Cream shortening and sugars, add eggs and vanilla and beat well
- 1 C shortening
- 1 C brown sugar
- 1 C white sugar
- 2 eggs well beaten
- 1 T vanilla extract
- 1 1/2 C flour
- 1 tsp salt
- 1 tsp baking soda
- 1 T cinnamon
- 3 C oats (we use Quaker Quick or Old Fashioned. Do NOT use instant.)
- 3/4 C chopped walnuts (use 1/2 cup if using raisins)
- 1 cup raisins (optional)
