- 6 large egg whites, room temperature
- 1 1/2 cups milk, room temperature
- WHITE BUTTERCREAM FROSTING
- 1 1/2 cups softened butter
- 2 teaspoons almond extract
- 4 cups powdered sugar
- 1 tablespoon milk
Cheesy Ground Beef and Potato Casserole Crockpot

Add the potatoes, onions and green pepper to the bottom of your slow cooker
- 1 lb ground beef, pasture raised, browned
- 1 cup onion, finely chopped and divided
- 1 1/2 cups cream of mushroom soup
- 3 cups yukon gold potatoes, finely diced
- 8 oz. cheddar cheese, shredded
- 1/4 cup green pepper, chopped
- 1/8 tsp ground black pepper
Crockpot Buffalo Ranch Chicken

Wash chicken. Place chicken in the Crock-Pot and pour Franks Red Hot Sauce over the chicken
- 3 Tablespoons of Hidden Valley dry ranch dressing (or 1 packet)
- 1 bottle of Franks Red Hot Sauce
- 3 lbs. of chicken breasts
Chilaquiles with Chicken and Black Beans

Preheat oven to 450° Stack corn tortillas and cut into 1 inch strips
- 15 (6 inch) corn tortillas, cut into 1 inch strips
- 1 cup yellow onion, sliced thin
- 3 garlic cloves, minced
- 1 1/2 cup chicken breast, cooked and shredded
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup chicken broth
- 2 (7 3/4 oz) cans salsa de chile fresco
- 1 chipotle in adobo, chopped
- 1/2 cup queso fresco (or mozzarella), crumbled
Black Bean Tostadas

Preheat oven to 425F. Brush both sides if tortillas with 2 TBSP Oil and sprinkle with 2 tsp salt
- 6 6-inch Corn Tortillas
- 3 TBSP Canola Oil
- Salt and Pepper
- 1/2 Large Onion diced
- 1 clove garlic
- 2 15-oz Cans black beans, drained and rinsed

Preheat oven to 400°F. Place tomatoes with liquid in medium bowl
- 1 can (14-1/2 oz.) diced tomatoes, undrained
- 2 cloves garlic, minced
- 1 pkg. (6 oz.) Stove Top Stuffing Mix for Chicken
- 1/2 cup water
- 1-1/2 lb. boneless skinless chicken breasts, cut into bite-sized pieces
- 1 tsp. dried basil leaves
- 1 cup Shredded Mozzarella Cheese
Veggie Cream "Cheese" Rollups (Willie)

1. Spread vegan cream cheese liberally (though not too thick) on the tortilla
- 1 package (8 count) flour tortillas (I like the tomato basil)
- 1 (8 ounce) tub vegan herb cream "cheese"
- 1 can (2.25 ounce) sliced black olives, drained
- 1-2 cucumbers, peeled and chopped
- 1 tomato, diced
- salt and pepper, to taste

- 1 1/2 cups butter, softened
- 3 cups sugar
- 1 1/2 teaspoons vanilla
- 5 eggs
- 1 cup buttermilk
- 2 1/4 cups flour
- 1/2 cup cocoa powder
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup chocolate chips
- Chocolate Frosting
- 2 cups powdered sugar
- 4 Tablespoons cocoa
- 2 Tablespoons melted butter
- 1/4-1/3 cup evaporated milk
Crockpot White Chicken Enchilada Casserole

In a large saucepan, melt the butter over medium heat
- 6 tablespoons salted butter
- 6 tablespoons corn starch or flour
- 2 1/2 cups chicken stock
- 1/2 cup milk
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon kosher salt
- 1 4 ounce can chopped green chiles
- 1 cup sour cream
- 3 cups cooked, shredded chicken
- 20 soft flour tortillas (or corn tortillas for a gluten free option)
- 2 cups shredded jalapeno jack cheese
- 2 cups shredded white cheddar

- 1 pound spaghetti noodles, cooked al dente and drained
- 1 pound ground beef, browned and drained
- 1 24ounce jar spaghetti sauce
- 8 ounces cream cheese, room temperature
- 1 cup sour cream
- 1 cup cottage cheese
- 1 cup grated cheddar cheese
- salt and pepper, to taste
