Season the pork chops with salt and pepper
- 4 bone-in pork chops, each about 1 lb. and 1 inch thick
- Kosher salt and freshly ground pepper, to taste
- 1 Tbs. olive oil
- 2 Tbs. honey
- 1/2 cup balsamic vinegar
- 1 tsp. minced fresh thyme
- 1/2 cup chicken broth
- 2 Tbs. unsalted butter
- Herbed bean salad for serving (recipe in sides section)

- 1 cup bourbon
- 1 cup brown sugar
- 2/3 cup soy sauce
- 1 bunch cilantro, leaves chopped
