Tomatillo-Avocado Salsa

- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 cup onion, minced very fine
- 2 serrano chiles, deseeded, minced very fine
- 1/2 pound tomatillos, husked, rinsed and quartered
- 1 ripe avocado
- 3 tablespoons fresh chopped cilantro leaves
- 2 tablespoons fresh lime juice
- Tortilla chips, jicama, red pepper and radish, to serve
Plain Sugar Syrup

Medium high heat, boil to dissolve sugar
- 4 cups sugar
- 2 cups water

- 1/4 cup vegetable oil, divided
- 3 medium cloves garlic, minced
- 1/4 teaspoon kosher or sea salt, plus more for seasoning
- 1/2 teaspoon chile powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon sugar
- 2 teaspoons fresh lime juice
- 1 pound boneless, skinless chicken breasts, sliced in strips
- 1 medium onion, sliced
- 1 large bell pepper, seeded and sliced
- One 15-ounce can chickpeas, drained and rinsed
- Fresh cracked black pepper
- Flour or corn tortillas, for serving
- Shredded cheese and sour cream, for serving (optional)
- Chopped avocado, chopped cilantro and salsa or chopped tomatoes, for serving (optional)

- 1 oz. Cream of Coconut
- 4 oz. Pineapple Juice
- 1 oz. Orange Juice

Grilled Sweet Chili Lime Chicken

- 4 Boneless Skinless Chicken Breasts
- 1/2 cup sweet chili sauce
- 1/4 cup soy sauce
- 3 Tablespoons orange marmalade
- 2 Tablespoons Lime Juice
