  • 1 3/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup buttermilk
  • 1/4 cup coconut oil
  • 1 egg
  • 2 Tbls lemon juice
  • 2 - 3 Tbls lemon zest (more zest = more lemon flavor)
  • 3/4 cup sugar
  • Glaze
  • 1/2 cup powdered sugar
  • 1-2 Tbls lemon juice
  • 1 Tbls lemon zest to sprinkle on top (optional)

  • 200 ml black current or concord grape juice (organic w/ no sugar added)
  • Zest of about a third of an Orange (to taste)(organic)
  • 4 slices of Orange
  • 10 whole cloves
  • Tsp of ground cinnamon or two cinnamon sticks
  • tsp of ground coriander
  • a small dash of nutmeg
  • Bottle of fruity full bodied red wine; to avoid the wine going sour, do not add it in to the above until ready to heat everything up.
