Glazed Light Lemon Bread

Preheat oven to 350 degrees
- 1 3/4 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup buttermilk
- 1/4 cup coconut oil
- 1 egg
- 2 Tbls lemon juice
- 2 - 3 Tbls lemon zest (more zest = more lemon flavor)
- 3/4 cup sugar
- Glaze
- 1/2 cup powdered sugar
- 1-2 Tbls lemon juice
- 1 Tbls lemon zest to sprinkle on top (optional)
Frozen Caipirinha Recipe

Add cachaca, lime juice, simple syrup and ice to a blender and blend on low speed until slushy
- 1 1/2 oz Cachaca
- 4 oz Lime Juice
- 1 oz Simple Syrup
- 1 1/2 cups ice - crushed
- slice Lime - for garnish
- Garnish: lime
- Glass: Highball glass
White Russian

Mix and enjoy
- 1 oz Kahlua
- 1 oz Stoli Vanilla
- 1/2 oz Irish Cream
- 1 oz milk
Holiday Mulled Wine

Add all ingredients except wine to a pot
- 200 ml black current or concord grape juice (organic w/ no sugar added)
- Zest of about a third of an Orange (to taste)(organic)
- 4 slices of Orange
- 10 whole cloves
- Tsp of ground cinnamon or two cinnamon sticks
- tsp of ground coriander
- a small dash of nutmeg
- Bottle of fruity full bodied red wine; to avoid the wine going sour, do not add it in to the above until ready to heat everything up.
Old Fashioned Cocktail

Combine the bourbon, simple syrup, and bitters in a glass, and stir to combine
- 2 ounces bourbon (or rye) (*see notes below on gluten-free brands*)
- 1 1/2 teaspoons simple syrup (**see instructions below)
- 2-3 dashes Angostura bitters, to taste
- ice
- 1 orange slice
- 1 maraschino cherry, with stem
Mexican Hot Chocolate with Tequila

Preparation Warm the milk in a medium size heavy saucepan on medium heat, watching carefully
- 3 cups Milk (I used 1% and it was good)
- 1 and 1/2 bars Ibarra chocolate; broken into chunks
- 6 Tbsp Scharffenberger Cocoa Powder
- 2 Tbsp Cane Sugar
- 1/8 - 1/4 tsp Cayenne Pepper (start with 1/8 tsp and season to taste)
- 4 ozs Tequila
- 1/2 cup heavy whipping cream
- Ground Cinnamon for Garnish
cheddar green bean casserole

Preheat oven to 425 degrees F
- 6 cups green beans, trimmed and cut into 1-inch pieces (about 1 1/2 pounds)
- 4 1/2 teaspoons extra-virgin olive oil, divided
- 1 tablespoon unsalted butter
- 3 shallots, minced
- 8-ounces Crimini or white mushrooms, finely chopped
- 2 teaspoons chopped fresh thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup dry sherry
- 1/3 cup all-purpose flour
- 1 cup reduced-sodium chicken broth or vegetable broth
- 1 cup low-fat milk
- 2 cups Cabot Seriously Sharp Cheddar, shredded and divided, 8-ounces
- 3 tablespoons dry breadcrumbs
- 1/2 teaspoon paprika
- 1/4 teaspoon onion powder

Fill an old-fashioned glass glass halfway with ice (not the crushed ice) and water and set aside to chill
- 1 handful (6-10) fresh blackberries, or boysenberries, loganberries, or mullberries
- 1/2 ounce agave nectar, brown rice syrup, or simple syrup
- 1 1/2 ounces gin
- 3/4 ounces freshly squeezed lemon juice
- Crushed ice*
- 1 ounce creme de mure or creme de cassis

Mix all ingredients together
- 1 (18 1/4 ounce) box reduced-sugar yellow cake mix
- 1 ⁄2 cup Egg Beaters egg substitute (4 egg whites)
- 1 ⁄2 cup brown sugar substitute (or white sugar substitute)
- 1 ⁄2 cup canned pumpkin
- 1 cup mini chocolate chip
- 1 teaspoon vanilla
