Oyster Sauce Beef and Chinese Pea Pods

Combine beef, cornstarch, sugar, soy sauce, sherry, oyster sauce and 1 T
- 1-1/2 lb. beef, thinly sliced
- 1 T. cornstarch
- 1 T. sugar
- 1 t. soy sauce
- 2 t. sherry
- 1/4 c. oyster sauce
- 2 T. salad oil
- 1 clove garlic, minced
- 1/2 c. thinly sliced onion
- 1 c. Chinese pea pods
Grandma’s Pound Cake

Preheat oven to 325°. Prepare a generously greased and floured bundt pan
- 1 C (2 sticks) Margarine- at room temperature
- 1/2 C Crisco
- 3 C Sugar
- 5 Large eggs- at room temperature
- 3 C All-purpose flour
- 1/2 tsp Baking powder
- Pinch of salt
- 1 1/4 C Milk- at room temperature
- 1 tsp Vanilla
Impossibly Easy Mini Buffalo Chicken Pies

1 Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray
- Buffalo Chicken Mixture:
- 6 tablespoons butter, melted
- 1/2 cup hot sauce
- 1/4 teaspoon seasoned salt
- 1/4 teaspoon pepper
- 1 1/2 to 2 cups shredded or chopped cooked chicken
- 1 cup freshly shredded sharp Cheddar cheese (4 oz)
- 2 tablespoons ranch dressing or blue cheese dressing, if desired
- Batter:
- 1/2 cup Original Bisquick® mix
- 1/2 cup milk
- 2 eggs
- Toppings:
- 1/3 cup blue cheese crumbles
- 4 green onions, chopped (4 medium)
- 1 bunch fresh cilantro, chopped
Fat Tuesday Chili

Preheat oven to 325°F. Bring meat to room temperature and pat dry
- 2 1/2 to 3 pounds beef chuck, trimmed and cut into bite-sized cubes
- Salt and pepper
- 2 to 3 tablespoons canola oil
- 5 tablespoons butter
- 2 tablespoons Gebhardt chili powder or Ancho chili powder
- 1 rounded tablespoon ground cumin
- 1 tablespoon paprika
- 1 tablespoon coriander
- 1 teaspoon ground cayenne pepper
- 1 large onion, chopped
- 2 green bell peppers, chopped
- 2 to 3 ribs celery, chopped
- 6 cloves garlic, sliced
- 1 large fresh bay leaf
- 3 tablespoons fresh thyme, chopped
- 4 tablespoons flour
- 1/4 cup Worcestershire sauce
- 1 bottle pale ale, at room temp
- 3 cups chicken stock
- 1 15-ounce can red beans, drained
- 1 15-ounce can diced tomatoes with green chilies
- Scallions, thinly sliced on an angle
- Tabasco sauce, to pass at table
- “Cheese-It” snack crackers, crushed, for topping
Manhattan Style Clam Chowder

1. Steam the clams until they open
- one about one gallon of clams, cleaned
- 2 1/2 cups water with 1/2 teaspoon salt
- 3 slices of bacon
- 3 tablespoons of butter
- 1 medium sweet onion, minced
- 1 stalk of celery, chopped
- 1 teaspoon minced garlic
- 1/4 cup all-purpose flour
- 2 2/3 cups peeled, seeded, and diced and then pureed plum tomatoes
- 1 bay leaf
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 medium russet potato, peeled and diced into 1/2 inch cubes
- 1 teaspoon salt
- pepper as needed
- Tobasco sauce, a few drops as needed
Marion’s Pumpkin Bread with Chocolate Chips

Place a rack in the center of the oven and preheat the oven to 350°F
- Vegetable oil spray, for misting the loaf pans
- 4 large eggs
- 1 1/2 cups sugar
- 1/2 cup vegetable oil
- 1/2 cup unsweetened applesauce
- 1 can (15 ounces) pumpkin
- 2 cups all-purpose flour, plus flour for dusting the loaf pans
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cloves
- 1 teaspoon ground ginger
- 2 cups semisweet chocolate chips

- 1/2 cup currants or finely chopped pecans
- 2 cups unbleached flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1 1/2 cups vegetable oil
- 2 cups granulated sugar
- 1 can (15 ounces) pumpkin
- 2 teaspoons vanilla extract
- 4 large eggs
- 2 teaspoons powdered sugar for dusting the cake

- 1 (18.5-ounce) package hoagie rolls, split
- 3 tablespoons olive oil
- 1 (4-1/2-ounce) can chopped ripe olives, drained
- 6 plum tomatoes, thinly sliced
- 6 ounces Gruyere or Swiss cheese, shredded or sliced
- 1/3 cup coarsely chopped fresh basil
Roasted Red Pepper Hummus

- 2 large sweet red pepper
- 2 cans (15 ounces each) garbanzo beans or chickpeas, rinsed and drained
- 1/3 cup lemon juice
- 3 tablespoons tahini
- 1 tablespoon olive oil
- 2 garlic cloves, peeled
- 1-1/4 teaspoons salt
- 1 teaspoon curry powder
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/2 teaspoon pepper
- Pita bread, warmed and cut into wedges, and reduced-fat wheat snack crackers
- Additional garbanzo beans or chickpeas, optional
