Stained Glass Window Cookies

In a large saucepan, melt butter and chocolate chips over low heat, stirring constantly
- 1/2 cup (1 stick) butter, softened
- 1 (12-ounce) package semisweet chocolate chips
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts
- 1 (10.5-ounce) package multi-colored miniature marshmallows
- 1 cup sweetened flaked coconut
Roasted Garlic-Potato Soup

Remove white papery skin from each garlic head (do not peel or separate cloves)
- 5 whole garlic heads
- 1 cup diced onion
- 2 beef slices, diced
- 1 cup diced carrot
- 6 cups diced baking potato (about 2 pounds)
- 2 garlic cloves, minced
- 4 cups low-salt chicken broth
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 1 bay leaf
- 1/4 cup chopped fresh parsley
- 1 cup 2% low-fat milk
Fresh Pesto Sauce

Combine all ingredients in a blender or food processor; blend until smooth
- 2 cups lightly packed fresh basil leaves
- 1 cup olive oil
- 1 cup grated Parmesan cheese
- 2 garlic cloves
- 1/2 cup pine nuts or walnuts
- 1/2 teaspoon salt
Japanese Hamburger Steak

If using onion, saute chopped onion in oil or butter until translucent
- 1/2 large onion, finely chopped
- Sea salt
- Freshly ground black pepper
- 1 lb ground beef (I used 10% fat but if you want your steak tenderer, use 20%)
- 1 egg
- 2 tablespoons milk
- 1/3 cup Panko (Japanese bread crumbs)
- 1 teaspoon salt
- Freshly ground black pepper
- 1/2 teaspoons nutmeg or ground cinnamon
- 2 tablespoons oil
- 1/4 cup red wine
- For the Sauce
- 1 tablespoon butter
- 3 tablespoons red wine
- 3 tablespoons water
- 3 tablespoons Ketchup
- 3 tablespoons Tonkatsu Sauce (or Worcestershire sauce)
Honey Glazed Salmon

1. Using paper towels, pat salmon dry
- 4 (4-6 oz.) boneless, skinless Salmon filets
- 1 tbsp. GOYA® Adobo All-Purpose Seasoning with Pepper
- 2 tbsp. Extra Virgin Olive Oil
- 1/2 cup Honey
- 1 tsp. red pepper flakes
- 1/2 tbsp. Lemon Juice
White Bean & Tomato Salad

- 15-oz. can cannellini beans, drained and rinsed
- 2 zucchini or yellow squash, diced
- 1 pt. cherry tomatoes, halved
- 1/2 c. red onion, chopped
- 3 T. olive oil
- 2 T. lemon juice
- 1/4 c. fresh cilantro, chopped
Italian Cheese Stack

Place 1 slice of cheese on a large piece of heavy-duty plastic wrap; spread 1 teaspoon pesto over cheese
- 1 pound thinly sliced provolone cheese
- 1 (3.4-ounce) jar pesto sauce
- 3/4 pound thinly sliced salami
- 1/4 cup Italian salad dressing
- Baguette slices, breadsticks, crackers
Turkey and Cheddar Wrap

In a small cup, combine mayonnaise and mustard
- 1 1/2 Tbsp reduced-calorie mayonnaise
- 2 tsp mustard, coarse-grain
- 2 medium whole wheat tortilla(s), warmed according to package directions
- 4 oz cooked turkey breast without skin, chopped
- 1/4 tsp table salt
- 1/8 tsp black pepper, freshly ground (or to taste)
- 1/2 cup(s) fresh tomato(es), diced
- 2 Tbsp (chopped) uncooked red onion(s), diced
- 1 cup(s) fresh watercress
- 3 Tbsp low fat shredded cheddar cheese, sharp-variety

- 3-4 tablespoons ice water
- Custard:
- 1 1/2 cups milk, 2% or higher
- 1/3 cup sugar
- 3 tablespoons cornstarch
- 1 egg
- 1 teaspoon vanilla extract
- 1 tablespoon butter
- Peaches:
- 4 cups sliced fresh peaches
- 1/4 cup sugar
- 1/2 teaspoon cinnamon
- 1 tablespoon butter
- 2 tablespoons cornstarch
- 3 tablespoons water
- Whipped cream:
- 1 cup heavy whipping cream, cold
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla
- 1/2 teaspoon powdered gelatin
- 1 1/2 teaspoons cool water
