Capellini with Light Sauce

In a large pot of boiling salted water, cook the pasta to desired doneness; drain and place in a large bowl
- 1 pound capellini (angel hair pasta) or other long, thin pasta shape
- 4 tablespoons vegetable oil
- 1 tablespoon minced garlic
- 5 cups diced fresh tomatoes
- 1/2 teaspoon dried basil
- Salt to taste

- 1 onion, chopped
- 3 garlic cloves, sliced
- 2 8 oz cans of tomato sauce
- 1/2 cup chicken stock
- 2 tablespoons tomato paste
- 2 tablespoons fresh dill, chopped

Lemon Garlic Chicken with Red Potatoes and Green Beans

Preheat the oven to 450F. Coat a large baking dish with 1 tbsp of olive oil
- 2 lemons, 1 thinly sliced and 1 juiced
- 6 T oil
- 4 cloves of garlic, minced
- 1 t kosher salt
- 1/2 t pepper
- 3/4 lb trimmed green beans
- 8 small red potatoes, quartered
- 4 chicken breasts
