French Onion Soup - Beef Au Gratin

A great diversion from standard French Onion Soup! Easy to make and just delicious!
- 1/2 c butter
- 4 c thinly sliced onions
- 1 lb sirloin cubes
- 3 T flour
- 1 t cumin
- 1 T dark brown sugar
- 1 t salt
- 1/2 t pepper
- 1 qt beef broth
- 1 c shredded mozzarella cheese
- 1/2 c grated parmesan cheese
Key West Chowder

Saute onion, garlic, celery, red an green peppers in olive oil for 2 minutes
- 1/4 cup olive oil
- 2 1/2 cups onion, chopped
- 8 cloves garlic, minced
- 1 1/2 cups celery
- 1 1/2 cups red pepper
- 1 1/2 cups green pepper
- 8 cups Bloody Mary mix
- 3 1/2 cups Dice Tomatoes with Chiles
- 6 1/4 cups Pasta Sauce
- 4 cups seafood stock
- 2 cups corn
- 1/2 cup cilantro, chopped
- 2 Tbsp Old Bay seasoning
- 1 1/2 lbs. shrimp
- 1 1/2 lbs. scallops
Beef Brisket Bar-B-Q - Entree

Rub meat with salt. Place in ungreased baking dish
- 4-5 lbs. boneless beef brisket
- 1 1/2 t salt
- 1/2 c ketchup
- 1/4 c vinegar
- 1 T worchestshire sauce
- 1 1/2 t liquid smoke
- 1 bay leaf crumbled
- 1/4 t pepper
- 1/2 c chopped onion
Bagel Sticks, Scallion Cream-Cheese Stuffed

Preheat oven to 400 deg. Bring a large pot of water to boil
- 1 8 oz. pkg cream cheese, softened
- 3-4 scallions, sliced
- 1 ball store-bought pizza dough
- 1 egg, slightly beaten
- Sesame seeds
Beef, BBQ

Put roast into crock pot with all other ingredients, except rolls
- 3 lb. rump roast
- 1 1/2 c ketchup
- 1/4 c + 2 T red wine vinegar
- 1/3 c dark brown sugar
- 1 t liquid smoke
- 1 T onion flakes
- 1/8 t garlic powder
- Rolls
Mini Crab and Cream Cheese Flautas

Heat oil in medium saucepan over medium-high heat to 375 degrees
- 2 cups vegetable oil
- 1 pkg. (8 oz) crab meat, drained
- 1 can (4 oz) fire-roasted diced green chiles, drained
- 4 oz. cream cheese, softened
- 6 8" flour soft tortillas
- 1 cup sour cream
- 1/2 cup salsa verde

Heat olive oil in large pan
- 3 lg boneless, skinless chicken breasts
- 2 lbs asparagus, 1" pieces
- 4 T olive oil
- 1/2 c white wine
- salt & pepper
Winter Sangria

Mix a bottle of light red wine with a sliced lemon and sliced orange
- 1 bottle light red wine
- Sliced lemon
- Orange
- a few cinnamon sticks
- 1 cup of sparkling water
- fresh or frozen cranberries

- 1 c soft shortening
- 2 egg yolks (unbeaten)
- 2 c flour
- 1/2 c brown sugar
- 1/2 t vanilla
- 2 egg whites (unbeaten)
