Black Forest Bites

Mix crumbs, 1 c sugar, cherries, corn syrup, butter, cocoa and vanilla
- vanilla wafers, finely crushed
- 1 c conf. sugar
- 1/2 c dried tart cherries, chopped
- 1/4 c light corn syrup
- 1/2 c butter, melted
- 2 T unsweetened cocoa powder
- 1 t vanilla
- conf. sugar
Chicken and Dumplings

Fill large stewpot halfway with water
- Dumplings:
- 4 large bone-in chicken breasts
- 2 stalks celery with greens
- 1 large onion
- salt & pepper
- poultry seasoning
- boullion cubes
- flour
- 2 potatoes
- 2 large carrots
- 2 c flour
- 4 t baking powder
- 1 t salt
- 4 T soft butter
- 1 c milk
Red Pepper Risotto

Bring the stock to a simmer in a saucepan with a ladle nearby
- 6 to 7 cups chicken stock
- 2 Tbls extra virgin olive oil
- 1/2 cup finely chopped onion or shallot
- 2 plump garlic cloves, minced
- 2 large red peppers, finely diced
- Salt to taste
- 1 1/2 cups arborio or carnaroli rice
- 1/2 cup dry white wine
- Freshly ground pepper to taste
- 2 Tbls chopped fresh parsley or a mixture of parsley and thyme
- 2 oz. Parmesan cheese, grated (1/2 cup)
Cilantro Chicken

1 Pound the chicken breasts to an even thickness (about 1/2 in
- 4 boneless skinless chicken breast halves (2 lb. total)
- 1/4 cup lime juice
- 1/2 cup fresh cilantro, chopped
- 6 garlic cloves, chopped
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
4th of July Trifle

Cream together cream cheese and confectioners sugar
- 2 (8 oz) pkgs cream cheese
- 2 cups confectioners' sugar
- 8 oz. sour cream
- 1/4 tsp almond flavoring
- 1 tsp vanilla
- 1/2 pint whipping cream
- 1 angel food cake (store bought is fine)
- 1 quart strawberries
- 1 quart blueberries
- 3/4 cup sugar
- 3 Tbsp almond flavoring
- 1 large clear glass bowl
Blueberry "Pop" Pie

Prepare shell. Place 2 c berries into cooled shell
- 4 c raw blueberries
- 1/4 c water
- 1 c sugar
- 1 T lemon juice
- 3 T cornstarch
- 1/4 t salt
- 1 T butter

- 1/2 t poultry seasoning
- 2 thinly sliced carrots
- 1 chopped celery stalks
- 8 sml potatoes
- 9 sml onions
- 2 T cornstarch
- parlsey
- 1 c flour
- 1 egg
- 1/2 c sour cream
- 1/2 c chicken broth
Applesauce Bread Pudding

Cut sliced bread into 1/2" cubes
- 1 loaf (16 oz) sliced light-style white bread
- 1 c raisins
- 2 t ground cinnamon
- 2 c skim milk
- 1 c applesauce
- 8 egg whites
- 1/2 c firmly packed brown sugar
- 1 1/2 t vanilla extract
Brats (Tailgate)

Mix beer, sugar, mustard, chili powder and sauce
- 8 uncooked bratwurst links
- 2 12 oz. beers
- 4 T brown sugar
- 2 T prepared mustard
- 2 t chili powder
- Several dashes of hot sauce
- 2 c hickory or oak wood chips
Cream Cheese and Mascarpone Cheesecake

Do not worry if the cheesecake sinks and cracks while it cools
- 12 tablespoons (1 1/2 sticks) unsalted butter, room temperature
- 1 1/4 cups plus 2 tablespoons sugar
- 1 1/4 cups all-purpose flour
- 1 1/4 cups yellow cornmeal
- 1/2 teaspoon table salt
- 1 1/2 pounds cream cheese, room temperature
- 1/2 pound mascarpone cheese, room temperature
- 5 large whole eggs, plus 1 large egg yolk
- 1/4 cup heavy cream
- 1 tablespoon pure vanilla extract
- Zest of 1 orange and 1 lemon
- Stewed Rhubarb
- 1/2 pint raspberries
