Chicken Breasts, Creamy Baked

Arrange chicken in shallow baking pan
- 12 boneless chicken breasts
- 12 slices swiss cheese
- 1 can cream of chicken soup
- 1/2 c dry white wine
- 2 c seasoned stuffing mix
- 1/2 c melted butter
Chicken Burgers

Mix chicken, 1/2 c crumbs, mayo, scallions, lemon juice & salt
- 2 lbs. chicken, diced
- 1/2 c mayonnaise
- 2 T fresh lemon juice
- 1 T vegetable oil
- 1 c saltine cracker crumbs
- 1/4 c scallions
- 1/2 t salt
Cherries in the Snow

With mixer, beat softened cream cheese, powdered sugar, milk and vanilla until blended
- (2) 8 oz. Pkgs. Of Cream Cheese (softened)
- 1 Cup of Powdered Sugar
- 1 Cup of Milk
- 1 Teaspoon of Vanilla
- 1 Angel Food Cake cut into 1 inch pieces
- (1) 12 – 16 oz. container of Cool Whip
- (1) 16 oz. Can of Comstock Cherries
Pinwheels, Party

Mix first 3 ingredients. Spread on tortillas
- 2 8 oz. pkg cream cheese, softened
- 1 pkg Ranch Dressing mix
- 2 green onions, minced
- 4 (12") flour tortillas
- 1/2 c diced red pepper
- 1/2 c diced celery
- 1 can sliced black olives, drained
Crab Tarts

To make it quickly, use prepared tart shells instead of making your own
- Pastry:
- 1/2 cup butter, softened
- 8 oz. cream cheese, softened
- 1 1/2 cups flour
- 1 tsp dill weed
- Filling:
- 5 large eggs
- 1/2 cup half-and-half cream
- 1 1/4 cups grated swiss cheese
- 4 1/4 oz. can of crabmeat, drained, flaked
- 1 tsp minced onion flakes
- 1 tsp parsley flakes
- 1/4 tsp Worcestershire sauce
- 1/4 tsp salt
- 1/8 tsp pepper
- paprika (optional)
Chicken 'n' Cheese Casserole

Preheat oven to 350 deg. Combine all ingredients, mixing well
- 2 c cooked macaroni
- 2 c coarsely chopped cooked chicken
- 2 c cream of mushroom soup, undiluted
- 2 c milk
- 8 oz. cheddar cheese, cut into cubes
Halibut, Grilled with Cilantro Garlic Butter

Delicious! Fish is simply seasoned with lime juice then served with a cilantro lime garlic sauce
- 4 (6 oz) fillets of halibut
- 1 lime, cut into wedges
- salt & pepper to taste
- 3 cloves garlic, coarsely chopped
- 1/2 cup chopped fresh cilantro
- 1 T fresh lime juice
- 2 T butter
- 1 T olive oil
Chicken Pasta Parmesan

In a large pot, cook pasta
- 8 oz. pasta, any type
- 16 oz. broccoli flowerets
- 1 clove fresh garlic or 1 t powder
- 6 oz. chicken breast strips, grilled
- 1/4 c butter or olive oil
- 3/4 c grated parmesan cheese
Roast Chicken with Apples & Onions

Preheat oven to 375 deg. Place chicken, apples, onions in pan
- 4 skinless, bone-in chicken breasts
- 1 large firm apple (Fuju/Granny Smith) sliced thin
- 1 large onion, sliced
- 1 cup chicken broth
- 1/2 cup unsweetened apple juice
- 1 tsp thyme
- salt & pepper
Pina Colada Dip

This creamy, pale yellow dip is excellent with fresh fruit
- 14 oz. can crushed pineapple, with juice
- 3/4 cup milk
- 1/2 cup coconut milk
- 4 oz. cream cheese, softened
- 1 pkg (4 serving size) instant vanilla pudding
