Veal Oscar

Cook asparagus, drain. Place on platter with crabmeat, cover and keep warm in 200 deg
- Sauce:
- 1 10 oz. pkg frozen asparagus spears (or fresh)
- 1 6 oz. pkg crabmeat, drained
- 8 veal scallops (about 1 1/2 lbs.)
- 3 Tbsp flour
- Dash salt
- Dash pepper
- 3 Tbsp butter, divided
- Bearnaise Sauce (recipe follows)
- 3 Tbsp red wine vinegar
- 3 Tbsp dry white wine
- 1 Tbsp finely chopped onion
- 1/4 tsp tarragon
- 1/8 tsp salt
- 1/8 tsp pepper
- Dash chervil
- 1 Tbsp cold water
- 1/2 cup butter, melted
- 3 egg yolks
White Chocolate-Almond Dipped Cookies

In a large bowl, cream butter and confectioners' sugar until light and fluffy
- 1 c butter, softened
- 1/2 c confectioners' sugar
- 1/2 t almond extract
- 2 c flour
- 1 c finely chopped dired apricots
- 8 oz. white candy coating, chopped
- 1 c finely chopped almonds, toasted

Shrimp/Crab Pizza

- 2 8 oz. cream cheese bricks
- 2 T minced onion
- Garlic salt to taste
- 1 T lemon juice
- 3/4 bottle Chili sauce
- 1 c baby shrimp or crab meat
- 1 c shredded cheddar cheese
Apple Pork Chops

Preheat oven to 175 degrees
- 4 3/4 " thick pork chops
- 1 tsp vegetable oil
- 2 Tbsp brown sugar
- salt & pepper to taste
- 1/8 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 2 Tbsp unsalted butter
- 2 tart apples - peeled, cored and sliced
- 3 Tbsp pecans (optional)
Cranberry and Apple Stuffed Pork Chops

Heat 1 Tbls olive oil in a skillet over medium heat
- 1 Tbls olive oil
- 1/2 onion, chopped
- 1 large apple, peeled, cored and diced
- 2 Tbls balsamic vinegar
- 1/2 cup dried cranberries
- salt and pepper to taste
- 2 (6 oz) boneless pork chops
- 1 Tbls olive oil
Asparagus, simple roasted

Preheat oven to broil. Snap off tough ends of asparagus (trim beans)
- 2 lb. fresh asparagus (or beans)
- 1/4 c olive oil
- 1 t sugar
- 1/2 t salt
- 1/2 t freshly ground pepper

- 1 1/2 c chocolate graham cracker crumbs (about 10-12 whole crackers)
- 4-6 T melted butter
- 1/4 c sugar

- 1 cup mayonnaise
- 1 tsp Worcestershire sauce

- 2 (8 oz) blocks sharp cheddar cheese, shredded
- 3/4 cup chopped pecans
- 1 (4 oz) jar chopped pimiento, drained1/3 cup chopped green onion
