Plantain Cassrole Recipe

Preheat oven to 350. Brown and season ground meat
- 1 lb ground beef
- 1 tsp of seasoning salt
- 1/2 tsp oregano
- 1/4 tsp thyme
- 1/8 tsp black pepper
- 1/4 tsp minced garlic
- 1 green pepper, finely chopped
- 1 small onion finely chopped
- 1/2 cup tomato sauce
- 5 ripe plantains (almost black skinned)
- 1 egg
- 1/2 cup shredded mozarella cheese
- 1/2 cup shredded cheddar cheese (mix both cheeses together)
- oil for frying plantains
Skillet Pizza Dough

In a small bowl, stir together the lukewarm water, yeast and sugar
- 3/4 c lukewarm water
- 1 T active dry yeast
- 1 t sugar
- 2 1/4 c flour
- 1 t salt
- 3 T EVOO
Balsamic Chicken Sandwich

For a healthier version, substitue whole-grain rolls or whole-wheat bread
- 1 lb. boneless, skinless chicken breasts, cubed
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup whole-wheat flour
- 3 Tbsp olive oil
- 3 cloves garlic, minced
- 1 cup low-fat, reduced-sodium chicken broth
- 1/2 cup balsamic vinegar
- 6 Tbsp firmly packed dark-brown sugar
- 1/2 cup broccoli puree
- 6 ciabatta rolls
- 6 large slices tomato
- 1/2 cup grated part-skim mozzarella
- Fresh basil (optional)
Apple Dumplings

Preheat oven to 350 deg. Using food processor, pulse flour, butter & salt until coarse crumbs form
- 1 stick butter, cut into 1/2" cubes
- 1/4 t salt
- 1 c brown sugar
- 1/2 t ground cinnamon
- 4 small baking apples, peeled, cored
- & halved lengthwise
- Vanilla ice cream or whipped cream

- 1 pkg frozen dinner rolls
- 1 pkg vanilla pudding (not instant)
- 1/2 c brown sugar
- 1/2 c melted butter
- 1/2 c nuts
- 1/2 c raisans

Meatloaf

Put oven rack in middle position and preheat oven to 350°F
- 2 lb meatloaf mix (beef, pork, and veal)
- 1 cup cooked oatmeal
- 1 cup finely chopped onion
- 1/3 cup finely chopped fresh parsley
- 1/4 cup soy sauce
- 2 large eggs
- 2 teaspoons finely chopped garlic
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/2 cup chili sauce (ketchup-based)
Sizzlin' Flounder

Place 1 oven rack 5" from heat; place second rack in the middle of the oven
- 1/4 cup grated parmesan cheese
- 1 tsp paprika
- 4 fish filets (any white fish works!)
- 3/4 tsp salt
- 1/4 tsp pepper
- 1/2 cup butter
- 2 Tbsp fresh lemon juice

- 1 1/2 lbs. green apples, thinly sliced

- 1/2 t cinnamon
- 1 large egg, beaten with 1 t water
