Caprese On a Stick

Tomatoes, basil and small bites of fresh mozzarella cheese marinated in a light lemon and herb vinaigrette
- Marinade:
- 1 pt Grape Tomatoes
- 24 Small Basil Leaves
- 1 Container Ciliegine, small fresh mozzarella balls
- Balsamic Vinegar
- 1/4 cup Extra Virgin Olive Oil
- Finely Grated Zest of 1 Lemon
- 1 1/2 Tbsp Fresh Lemon Juice
- 1 Tbsp Dried Thyme Leaves or Basil
- 2 Garlic Cloves, minced
- Kosher Salt & Freshly Ground Pepper, to taste
Antipasto Kabobs Recipe

In a large resealable plastic bag, combine the olives and salad dressing
- pimiento-stuffed olives
- large pitted ripe olives
- 3/4 cup Italian salad dressing
- thin slices pepperoni
- thin slices hard salami, halved
- thin slices provolone cheese
Anginetti Cream Puffs

- 1 5 oz. anginetti cookies (Stella Doro)
- 1 1/2 c cool whip
- 3 oz. cream cheese
- 1 8 oz can crushed pineapple, drained
French Onion Soup

In deep skillet, heat 2 T EVOO
- 2 large sweet onions, thinly sliced
- 1 c dry red wine
- 2 cans beef broth (14.5 oz. cans)
- 5 oz. seasoned croutons (2 c)
- 4 thick slices swiss cheese
Praline Bars, Chewy

Heat oven to 375 deg. Coat 15x10x1" pan with cooking spray
- 1 3/4 c flour
- 1/4 t salt
- 2/3 c butter
- 1 egg
- 1 1/2 c packed dark-brown sugar
- 1 t vanilla
- 1 c chopped pecans
- 1 c white chocolate baking chips
CARAMEL FRUIT DIP

- 1/2 c. brown sugar
- 1/2 c. Mrs. Richards Caramel Sauce

Italian Bocconcini & Basil Antipasto Skewers Recipe

These fun little antipasto skewers taste wonderful, are quick and easy to make, and are fun to eat
- Marinade:
- 12 wooden skewers
- 12 cherry tomatoes
- 12 oz. salami, cut into 1-inch cubes
- 12 bocconcini (Italian mini mozzarella balls)
- 12 slices of deli pepperoni, folded into a triangle
- 12 oil-cured black olives
- 12 marinated mushrooms (optional)
- 12 Italian pickled peppers (optional)
- 1/2 cup extra virgin olive oil
- 2-3 tbsp. red wine vinegar
- 2 tbsp. minced fresh basil
- 1 tbsp. minced fresh oregano
- 1 tsp. sea salt
- 1 tsp. freshly ground black pepper

- 2 cloves garlic, finely chopped
- 1 medium jalapeno chile, seeded and finely chopped
- 1 tube refrigerated pizza dough
- 1 large egg, beaten
- Coarse salt, for sprinkling

Combine oil, lime juice, orange juice, garlic, jalapeno pepper and salt in a medium bowl
- 3/4 c canola oil
- 1/2 c lime juice
- 1/4 c orange juice
- 2 T each minced garlic and jalapeno pepper
- 3/4 t salt
- 1/4 c sugar
- 12 skinless, boneless chicken breasts (about 3 1/2 lb)
- 1/2 c chopped cilantro
- Garnish: chopped cilantro, lime and orange wedges
