Key Lime Pie

Preheat oven to 250 degrees
- 1 3/4 cups sweetened condensed milk
- 4 egg yolks
- 6 tablespoons Key lime juice
- 1 9-inch prepared graham cracker pie shell
- 1 1/2 cups heavy cream, whipped
- 1/4 teaspoon vanilla 1 fresh lime, sliced
Homemade Ketchup

Transfer onion mix to saucepan and stir
- Puree 28 oz can of crushed tomatoes; set aside.
- Slice 1 medium yellow onion and sauté; let cool.
- In blender, puree onion and 1 tbsp capers (rinsed and drained)
- Add 1/2 cup packed light brown sugar and blend until smooth
- Add the strained juices of 1 orange, 1/2 grapefruit, 1/2 lemon and 1/4 cup cider vinegar
- 2 1/2 tsp kosher salt, and 1/4 tsp ground pepper and blend.

- CANDIED WALNUTS:
- 1/4 cup sugar
- 1 Tablespoon butter
- 1/4 teaspoon cinnamon
- 1 cup walnuts, halves or large pieces
- DRESSING:
- 1/4 cup Apple Butter
- 1/2 cup Apple Cider Vinegar
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1/2 cup olive oil
- SALAD:
- 4 cups mixed greens
- 1 apple, cored and thinly sliced
- 4 ounces goat cheese, crumbled
- 4 slices bacon, cooked and chopped

Preheat a charcoal grill. Whisk together vinegar, honey, wine, black pepper and parsley
- 2 T. champagne vinegar
- 2 T. honey
- I T. pinot gris wine (optional)
- 1 tsp. fresh cracked black pepper
- 1 T. Italian parsley, chopped
- 1 apricot, pitted and quartered
- 2 6-ounce pieces Chinook salmon salt and pepper, to taste
- 1 T. olive oil
Green Salad With Poppy Seed Dressing

In a large salad bowl, toss together lettuce, cucumber and red onion, set aside
- Dressing:
- 1 head lettuce, torn into bite-size pieces
- 1 small cucumber, sliced
- 1/4 red onion, sliced
- 1 cup honey
- 1 cup vinegar
- 1 cup vegetable oil
- 1 tablespoon poppy seeds
- 2 slices red onion, finely diced
