- 3 ounces baby wild greens
- 3 ounces romaine lettuce, cleaned and cut into 1-inch squares
- 1-2 fresh pears (your choice), peeled, cored and diced
- 1 avocado, peeled, pitted and diced
- 1/2 cup Gorgonzola cheese (crumbled)
- 2-3 ounces sugared walnuts
- Balsamic vinaigrette
Salmon Patties

Turn salmon and liquid into a medium bowl
- 1 can salmon
- 1 small onion, finely grated
- 2 tablespoons minced fresh parsley
- ground black pepper, to taste
- 2 large eggs, well beaten
- 1-1/2 cups fine dry bread crumbs
- 3 tablespoons butter
BB King’s BBQ Ribs

Rub ribs well with some of the Dry Spice Rub and refrigerate, covered, for 4 to 6 hours

- 4 cups canned tomato sauce
- 1/2 cup diced tomato

- 1/4 tablespoon Worcestershire sauce
- 2 tablespoons dried onion
- 1/4 cup soy sauce
- 1/4 cup water
Black Eyed Pea’s Broccoli Cheese Soup

- 1 1/2 pounds fresh broccoli
- 2 cups water
- 3/4 tsp salt
- 1/2 cup cornstarch
- 1 pint half-and-half
- 1 pound Velveeta
- 1/2 tsp pepper
Carbonnade à la Flamande (Flemish Beef Stew)

In an enameled cast-iron casserole, melt 2 tablespoons of the butter
- 4 tablespoons unsalted butter
- 3 pounds beef flatiron or blade steaks, cut into 1/3-inch-thick slices, about 3 inches wide
- Salt and freshly ground pepper
- 3 cups thickly sliced onions
- 1/2 cup all-purpose flour
- Three 12-ounce cans beer
- 1/2 teaspoon dried thyme
- 2 bay leaves
- Chopped parsley, for garnish
- Boiled carrots and potatoes, for serving
Sweet and Sour Sauce

Serve this sauce atop grilled chicken or chicken on skewers with onions and pineapple chunks
- 1/2 cup onion, chopped
- 1/2 cup green bell pepper, chopped
- 2 oz. butter
- Reserved juice from pineapple can
- 2 cups ketchup
- 2 tbsp. red wine vinegar
- 1 cinnamon stick
- 1 tsp. ginger, ground
- 1 tsp. cloves, ground
- 1 tbsp. brown sugar
- 1/2 cup orange juice
“The House” Dressing

Mix all ingredients in a blender or processor until well blended
- 1/2 cup mayonnaise
- 1/3 cup white vinegar
- 1 tsp vegetable oil
- 2 tbsp corn syrup
- 2 tbsp Parmesan cheese
- 2 tbsp Romano cheese
- 1/4 tsp garlic salt
- 1/2 tsp Italian seasoning
- 1/2 tsp parsley flakes
- 1 tbsp lemon juice
