Pickled Beets

Wash and trim the beets - trim off beet greens, leaving 2 inches of the beet tops on
- 1 lb. beets
- 1/2 cup cider vinegar
- 1/2 cup water
- 2 tbsp. sugar
- 1/8 tsp. pepper
- 1/8 tsp. salt
Baked Wild Rice

Preheat the oven to 350 degrees F
- 1 cup (2 sticks) butter, plus more for ramekins
- 1/2 pound raw wild rice
- 1 pound fresh mushrooms, sliced
- 1 medium white onion, chopped
- 2 teaspoons all-purpose flour
- 1 cup heavy cream
- 1/2 cup sherry
- Salt and freshly ground black pepper
- 1/2 cup buttered bread crumbs
Caraway Seed Soup

- 1 Tbsp. caraway seeds
- 2 cups water
- salt to taste
- 1 Tbsp. butter

- 6 cups baby spinach leaves
- 2 cups torn arugula
- 2 cups torn red endive or red cabbage
- 1/2 cup sliced radishes (optional)
- 1/4 cup snipped fresh basil
- Shards of fresh Parmesan cheese

- 1 package linguine noodles; cooked, rinsed and cooled
- 1/2 head sliced Napa cabbage (or more to taste)
- 1/2 head sliced purple cabbage (or more to taste)
- 1/2 bag baby spinach (or more to taste)
- 1 whole red bell pepper; sliced thin
- 1 whole yellow bell pepper; sliced thin
- 1 whole orange bell pepper; thinly sliced
- 1 bag Bean Sprouts
- Chopped Cilantro, up To 1 bunch
- 3 whole scallions; sliced
- 3 whole cucumbers; peeled & sliced
- 1 can (about 10 Oz.) whole cashews; lightly toasted in skillet

- 1/2 teaspoon coarsely ground black pepper
- 1/4 cup red wine vinegar
- 1 tablespoon fresh lemon juice
- 1/4 cup mayonnaise
- 3/4 cup extra-virgin olive oil
- 1/3 cup freshly grated Parmesan cheese
