Onion Soup, Florentine Style

In heavy soup pot or dutch oven, heat the oil over medium heat
- 1/4 cup olive oil, preferably extra-virgin
- 4 lbs. yellow onions, cut in half lengthwise, then thinly sliced
- 2 tsp. sugar
- salt
- 1 bottle of dry white wine
- 4 cups Italian style broth or 3 cups canned chicken stock or vegetable broth; diluted with 1 cup water
- 1 piece cinnamon stick, about 1.5" long
- 4 cups torn or cut very stale Italian or French bread
- whole fresh chives for garnish
- freshly grated parmesan cheese (preferably Parmigiano-Reggiano)
Vegetable Lasagna Rolls

For the Filling: Heat the oil in a large skillet over medium heat
- 1 tablespoon extra-virgin olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 small zucchini, finely diced
- 1 small yellow squash, finely diced
- Salt and freshly ground black pepper
- 15 ounces whole milk ricotta
- 1/2 cup Parmesan cheese, finely grated
- 1 large egg, beaten
- 3 tablespoons fresh flat-leaf parsley leaves, chopped
- 28 ounces canned whole peeled tomatoes
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup fresh basil leaves, chopped
- 1 pound lasagna noodles; cooked according to package instructions and drained
- 1 1/2 cups mozzarella cheese, grated
- 1/4 cup Parmesan cheese, grated
Golden Squash Soup

This is similar to Panera Bread's infamous soup
- 5 medium leeks (white portion only), sliced
- 2 tablespoons butter
- 4 cups cubed peeled butternut squash
- 4 cups chicken broth
- 1/4 teaspoon dried thyme
- 1/4 teaspoon pepper
- 1-3/4 cups shredded cheddar cheese
- 1/4 cup sour cream
- 1 green onion, thinly sliced
Warm Beer Batter for Fish

Fillets should be cold when dipped and dropped
- 1.5 lbs. of fillets
- 1 package dry yeast
- 1 cup warm beer
- 1 cup flour
- pinch of salt
- 1 egg white
Orange Julius

Combine all ingredients in a blender – set on high speed for 15 to 20 seconds
- 1 cup orange juice
- 1 cup water
- 2 egg whites
- 3/4 tsp vanilla extract
- 1/4 cup sugar
- 1 heaping cup ice

- 1/4 cup all-purpose flour

- 2 8 oz. cartons dairy sour cream

Cucumber Dill Dip

- 1 pkg. (8 oz) cream cheese, softened
- 1 cup Hellmann’s Real Mayonnaise
- 2 medium cucumbers, peeled, seeded, chopped
- 2 Tbsp. sliced green onion
- 1 Tbsp. lemon juice
- 2 tsp. snipped fresh dill or
- 1/2 tsp. dried dill weed
- 1/2 tsp. hot pepper sauce
