Italian egg-drop soup, Stracciatella, is traditionally a light soup made with just chicken broth, eggs and herbs
- 6 cups reduced-sodium chicken broth
- 2 cups water
- 1 1/3 cups whole-wheat medium pasta shells or other small pasta (4 ounces)
- 1 7-ounce can chickpeas, rinsed
- 1 bunch scallions, sliced, whites and greens divided
- Pinch of freshly grated nutmeg
- 3 cups chopped arugula, any tough stems removed
- 4 large eggs, lightly beaten
- Freshly ground pepper to taste
- 2 T lemon juice

- 1 tsp. dried Italian seasoning
- 1/4 to 1/2 tsp. crushed red pepper (optional)
- 2 cups chopped cooked chicken
- 2 cups shredded Monterey Jack cheese (8 oz.)
- 1 14-oz. can artichoke hearts, drained and quartered
- 1 10-oz. pkg. frozen chopped spinach, thawed and well drained
- 1/2 cup oil-packed dried tomatoes, drained and chopped
- 1/4 cup grated Parmesan cheese
- 1/2 cup soft bread crumbs
- 1/2 tsp. paprika
- 1 Tbsp. butter, melted

In large pot over medium-high heat, heat oil
- 1/4 cup olive oil
- 2 cups diced onions (cut into 1/2-inch cubes)
- 1/2 cup chopped garlic
- 1 cup celery, slices (bias-cut about 1/4 inch thick)
- 2 cups carrots, slices (half-moon-cut 1/2 inch thick)
- 1 tablespoon salt
- 1 tablespoon fresh ground black pepper
- 2 tablespoons chopped fresh rosemary
- 1 gallon chicken broth
- 2 lbs cooked chicken breasts, pulled into bite-sized pieces
- 1/2 cup shredded asiago cheese
- 1/2 cup grated parmesan cheese
- 1/2 lb small shell pasta, cooked
- fresh spinach leaves, cut into small pieces (to taste)
- additional asiago cheese (to garnish, to taste)
