Penne Salad Nicoise

A vegetarian Salade Nicoise with pasta
- 1 lb green beans, cut into 1 inch lengths ( about 4 cups)
- 1 lb red potatoes, cut into 1 inch pieces ( about 3 cups)
- 1 lb penne pasta
- 2 tablespoons olive oil
- 1 medium yellow onions, thinly sliced
- 2 garlic cloves, minced
- 1 lb plum tomatoes, ripe, chopped ( about 3 cups)
- 1 cup kalamata olives, pitted and chopped
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon fresh ground black pepper
- Salt, to taste
Italian Easter Bread

A beautiful, golden brown braided Easter bread nested with dyed Easter eggs
- 1 package instant yeast, about 2 1/4 teaspoons
- 1 1/4 cups warm milk
- 1 pinch salt
- 1/3 cup butter, at room temperature
- 2 eggs, lightly beaten
- 1/2 cup sugar
- 3 1/2 to 4 1/2 cups flour
- egg wash (1 egg, beaten with 1 teaspoon of water)
- 6 eggs, dyed, uncooked
- sprinkles to decorate
Crustless Zucchini Pie

Preheat oven to 400°. Lightly spray a pie dish with cooking spray or misto
- 10 oz shredded zucchini, all liquid squeezed out
- 1/2 cup shallots, chopped
- 1/4 chopped fresh chives
- 1/2 cup part skim mozzarella
- 2 tbsp grated parmesan cheese
- 1/2 cup white whole wheat flour
- 1 tsp baking powder
- 2/3 cup fat free milk
- 1 tsp olive oil
- 2 large eggs, beaten
- 1/2 tsp kosher salt
- fresh cracked pepper to taste

S'Mores Dip

- 1 can sweetened Condensed Milk, 14 ounces
- 1 1/2 cups Chocolate Chips

Pasta with Bolognese Meat Sauce

Place the porcini in a bowl of lukewarm water to cover and soak until softened, about 30 minutes
- 2 oz dried porcini mushcrooms
- 3 T unsalted butter
- 2 T extra-virgin olive oil
- 1 small carrot, peeled and finely chopped
- 1 celery stalk, finely chopped
- 1 small white onion, finely chopped
- 1/2 lb ground (minced) beef
- 1 T fresh flat-leaf Italian parsley
- 14 cup dry white wine
- 3 ripe plum (Roma) tomatoes, peeled, seeded, and chopped
- Pinch of ground nutmeg
- Salt and freshly ground pepper
- 1 lb fresh or dried pasta
- 1/4 cup grated Parmesan cheese

Warm Toasted Marshmallow S'more Bars
- 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
- 1 cup graham cracker crumbs
- 1 cup butter or margarine, melted
- 3 cups milk chocolate chips (18 oz)
- 4 1/2 cups miniature marshmallows
Mac and Cheese Shells

In a small saucepan, add pasta and milk
- 2 cups dried pasta
- 2 1/2 cups skim milk
- 1 cup loosely packed cheddar cheese, shredded by hand
- 1 tsp salt
- 1/4 tsp dijon mustard, can omit and substitute nutmeg instead (for either, start with a little and add more to taste)
- 1/4 tsp. cayenne pepper (optional)
